I was always interested in how children make lemonade that I saw in the old american movies. So I was very eager to try to make it by myself. And we still have some berries in our garden, so I made this lemonade. The result was very refreshing. Just it was too strong for us, so when we watered-down in half-and-half we got very light dring with a mild taste of lemon and black currants.

Purple lemonade

Time needed:

Ingredients:
1 cup = 237 ml

  • 340 g black currants
  • 1 ¾ cups sugar
  • 2 lemons grated zest
  • 2 l water
  • 1 ¼ cups freshly squeezed lemon juice (about 5 lemons)

Directions:

  • Puree the currants in a food mill using the finest disc. If the puree has seeds, strain it through a fine mesh sieve to remove them.
  • Combine the sugar, lemon zest, and 1 cup of the water in a small saucepan.
  • Heat until the sugar dissolves.
  • Remove from the heat and let cool.
  • Stir in the lemon juice and strain through a fine mesh sieve.
  • Stir together the currant puree, lemon mixture, and remaining water in a large pitcher.
  • Serve over ice.
  • For sparkling Purple Lemonade, substitute soda water for half of the second quantity of water.
  • Enjoy!

Black currant pie

This year I try to make something new out of currant because last year I had no time for them. And the first try – a pie with black currants. I took it to my work and my colleagues enjoyed it a lot. So after a few days I baked it again to my hubby because I knew he will love it too. I wasn’t wrong 🙂 So believe me – this pie with a creamy black currant cream is really worth your time!

It was really impulsive baking. I saw them in a magazine for parents in a section “Baking together”. 🙂 Together? So I asked if my kids want to bake something and they happily agreed. So I just measured all ingredients in purpose that my kids were not bored, and they started to work. The result came out perfect – smell was fantastic, and the taste was remarkable – berries gave some refreshing sourness and banana gave moisture. Even next day they were very good and left over disappeared too quickly. So I’m thinking to repeat them very soon again.

Cake Lemon Butterfly

I chose this cake because it was with lemon, so had to be refreshing, and it was in butterfly shape – it had to fit for my daughter’s birthday, because she love every creature that is alive 🙂 And I was wright! The cake was very good! I baked only half portion, but it was really enough for 6-8 people. Only next time I would bake only 2/3 of sponge, because we like when cake is almost all of cream and sponge is a very thin layer. But you should decide by yourself.

Gluten-free poppy seed cake with lemon glaze

For those, who still have left poppy seeds from Christmas. For those, who is seeking gluten-free cake. For those, who adore poppy seeds and lemon combination (it’s really worth trying!). This cake is really delicious, despite it contains only a few ingredients. I used 17cm diameter form, but original suggested to use 19cm diameter form. You should decide what size you will choose by yourself 🙂

Chicken is quite often prepared for lunch or dinner at our house, so it’s not surprise that I try to find new recipes with it. Till now I haven’t tried chicken with lemon. But this recipe is with mild lemon taste and is not very sour, so all my family enjoy it.
