This is my favourite pillaf recipe. After I found it I don’t seek any new anymore. I like it because it doesn’t use tomato sauce or ketchup, because real tomatoes are used. But if you like ketchup, you can use it anyway. Sometimes I adapt recipe for my hubby and add only small carrot, sometimes I don’t add bell pepper at all. But sometimes I do everything by recipe, because I think proportions given are just perfect.

Pillaf from Rustam

Time needed:
Yields: 4 servings
Calories: 500 kcal / 1 serving

Ingredients:

  • 250 g long grain rice
  • 400 g meat (usually I use pork)
  • oil
  • 1 big carrot
  • 1 can (400 g) tomatoes without skin
  • 1 bell pepper (your chosen colour)
  • 2 medium onions
  • 2-4 cloves garlic
  • salt
  • peppers
  • fresh herbs (for example parsley)

Directions:

  • Pour over rice cold water and let soak for 1/2-1 hour.
  • Cut meat in big chunks (2×2 cm). Slice carrot thinly. Onion, bell pepper and tomatoes chop into cubes.
  • Pour oil in a stewpot so much that oil covered all bottom of the pot. Put pot on a high heat and when oil will be so hot that smoke starts, add meat and fry from both sides.
  • Add carrots and stew for 3-5 minutes.
  • Then add tomatoes and stew for 3-5 minutes.
  • Then add bell pepper and stew for 3-5 minutes.
  • Then add onions and stew for 3-5 minutes.
  • Then add whole garlic cloves. Pour over rice, season with salt, peppers and herbs. Add boiling water, there should be 0,5 cm layer of water over everything.
  • Stew on a high heat for 10 minutes without a lid.
  • Then lower the heat to minimum, cover the pot and stew for 15-20 minutes more.
  • Take pot off the heat and mix pillaf with a spoon. Enjoy!

Rice cakes with vegetables

Last weekend, while my children were sleeping in the afternoon, I wanted to bake something sweet. But I was angry at my self, because I didn’t know what can I bake. So I started to browse in my computer looking for something suitable. And I saw these cakes. I decided to make them. I know, that they’re not sweet, but I had everything they needed in my fridge. I just didn’t make baskets out of rice, just did two layer cakes. And they tasted very good. At first I was afraid that my hubby will miss meat in them, but I was wrong 🙂

My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face 🙂 He even wasn’t disturbed that in this stew was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

I asked him maybe the dish is so good because almost all the week we ate what we had on hand? But he assured that no and ate almost everything, leaving just a few bites for my next day lunch… You can enjoy these salads and cold, and warm.
