Cottage cheese and pasta bake

I had a lot of cooked pasta and cottage cheese. So decided to try this bake and it was very good. My little daugther ate it with jam two days in a row.

Cottage cheese and pasta bake

Time needed:
Yields: 4 servings
Calories: 471 kcal / 1 serving

Ingredients:

  • 500 g cottage cheese
  • 250 g pasta
  • 2-3 eggs
  • 50 g butter
  • 2 tbsps. semolina
  • 2 tbsps.sugar
  • salts
  • bread crumbs

Directions:

  • Cook pasta in salted water. Strain it of and let cool a little bit.
  • In a bowl mix cottage cheese with sugar, egg yolks, a little bit of butter and salt.
  • Then add to cottage cheese mixture pasta, beaten egg whites, semolina and mix with light movements.
  • Baking form coat with butter and sprinkle with bread crumbs. Pour cottage cheese-pasta mixture into it.
  • On top add a few cubes of butter. Bake in a preheated oven for about 25-30 minutes.
  • Serve with sweet cream, cranberry or other jam.

This our new breakfast. It’s quick, easy, fresh and tasty. Now the weather is too cold for smoothies, baked eggs are boring and my family doesn’t eat much sandwiches. But these are different because greens brings freshness. So if you are bored from sandwiches with ham or cheese, you should try these.

Cottage cheese and boiled potato bake

Potatoes and cottage cheese – it’s always a great company. So why not to combine them in to a bake. It can be prepared within a few minutes. I found this recipe in Russian magazine about child-caring, but significantly changed by our observations: original recipe asks to slice the potatoes, but we prefer grated because it distributes better; original asks to pour more milk, we prefer the more eggs, and this bake comes out stronger. For us our experimentations came out super tasty. So, honestly, I urge you to try it too 😉

Don’t know why but every day I think about doughnuts 🙂 So then I found some curd in the fridge I knew what to do with it. With the help of Google I found Sonatina doughnuts with curd. They were very tasty. We ate them all in one time 🙂

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉

The weather is getting cold so I was looking for the warm food, but I didn’t want anything heavy so I suggest you to try this pasta dish with vegetables. It’s satisfying but refreshing at the same time (because of tomatoes).
