This dish was prepared very long time ago. I even thought to delete photos because I couldn’t find from which book I chose it. But accidentally this week I found it, so in hurry to put it in here. In spite I prepared this dish long time ago, I still remember that it is quick and very easy. So suits for quick dinner perfectly.

  • 400 g can tomatoes, pour juice and save
  • 400 g can beans, pour liquid off
  • 8 tortillas
  • 4 tbsps. sour cream
  • fresh coriander leaves to garnish

Directions:

Pipirinė kiauliena pitoje su česnakiniu padažu

Peppered pork pitas with garlic spread

This is my family favourite. Don’t know why – it looks so simple, but even my kids can’t stop eating till the plates are empty. You can buy pitas and just warm them, your dinner will be very quick, but I like homemade pitas. I’ve tried a few recipes, but this one I liked most, because all pitas were perfectly baked from the first time.

Chili con carne

Chili con carne

Mexican minced meat and bean chilli. Can be prepared very quickly. We were afraid that beans will blanket out other ingredients, but we were wrong and I am glad about that. We wanted something hot, and we got it 🙂

Maltos mėsos, svogūnų ir kmynų troškinys

Minced meat, onions and caraway seeds stew

This stew doesn’t require much of your time, it just needs time to braise. I think freshly baked buns would be perfect here, but I had no time for them, so we ate with white bread. Original recipe calls for a lot more caraway, but I adjusted the amount for my family taste. Also be careful with the salt if using stock or you can end up with too salty stew (as I do sometimes 🙂 ).

Pupelių, pomidorų ir agurkų salotos

White beans, tomato and cucumber salads

They came out very refreshing, filling and fast. Even the kids liked it, and my son said that these salads are even better than normal (he almost every time says that the meal is just normal).

Tortilijų suktinukai su burokėlių įdaru

Enchiladas with beetroot filling

Nice snack or light lunch. I prepared it long time ago, but when I remember mild taste of beetroot I feel good. And that’s why it deserves to be in my blog 🙂
