This time I used whole spelt flour, just because whole wheat four I couldn't get in our store. And measured everything in grams because it's more convenient for me. I was surprised that I had to use more flour that it was noted in original recipe. Maybe it's because of spelt flour. So I suggest to add spelt or wheat flour gradually and to see if more is needed.

The author of this recipe says it's cookies and in her blog they really look like cookies. In my case, they are balls and the texture is between cookies and buns. Therefore, we call them just balls. The first day they have crispy exterior and the next they are all soft. In my family, they are enjoyed in all forms. Just I have to hide some if I want to enjoy them next day. By the way, you can see from the ingredient list that all sweetness comes from just one tablespoon of honey, so in our opinion they are not cookies at all :) But if you will enjoy them with a sweet drink, they will be perfect companions.

The first time I baked these cookies with my daugther. They were very delicious and very sweet. So next time I used less sugar, but they spread less while baking. Here I give you proportions with less sugar because I like when cookies are cookies and not candies :) By the way, when I used hazelnuts my hubby said to leave them at home (didn’t let to take them to my work) :) So it says everything about the taste of these cookies.

I have not one biscotti recipe, but for the first time I decided to bake the simplest kind – basic. I was afraid that simple ones look like rusk, so I decorated them with dark and white chocolate. At the office, we laugh that I brought them rusks but anyway biscotti disappeared quickly. And for afternoon tea/coffee there were only a few biscotti left.

I started to make ice cream at home and that’s why I have a lot of egg whites which just needed to be used. So I remembered coconut cookies that all internet is full – quick, simple and easy. My dad just loves coconut in all forms, so I knew he will like these cookies. But kids also liked them a lot, and my mom have to hide some cookies for my dad :)

After a long term there comes the cookies which my daughter liked very very much. Other cookies for her a too dry, she likes only the ones with dried friuts or nuts, or seeds. My son is a “white flour boy”, he can eat all cookies and these cookies were not different :) . Puffed rice gives these crunchy cookies some softness. Chocolate like always gives for the cookies some charminess and while cookies are warm it is still melted and that’s the way my daughter likes :)

I chose them because in the recipe it was written that they don’t spread. Yes, it’s correct. But I expected more crunchy, and they were soft. But they hole the form very well and are really delicious. I gave them as a present in my job. They disappeared in minutes :) And I was asked for the recipes.

I have no time to do nothing :) My job is taking all my time. Good news that it will not last forever. So I have no time to bake cookies or pies, but it doesn’t stop me from wanting some sweets. And these cookies are perfect – you can form a log and then put in a freezer for later bake, when you will have no spare time.
