The first time I baked these cookies with my daugther. They were very delicious and very sweet. So next time I used less sugar, but they spread less while baking. Here I give you proportions with less sugar because I like when cookies are cookies and not candies 🙂 By the way, when I used hazelnuts my hubby said to leave them at home (didn’t let to take them to my work) 🙂 So it says everything about the taste of these cookies.
Chocolate chip cookies with nuts and apricots
Time needed:
Yields: 30 cookies
Calories: 98 kcal / 1 serving
Ingredients:
1 cup = 237 ml
- 1 2/3 cups all purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup (110 g) butter, room temperature
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp. vanilla sugar
- 2/3 cup nuts (I suggest hazelnuts), coarsely chopped
- 2/3 cup dried apricots, coarsely chopped (or other dried fruits)
- 75 g chocolate, coarsely chopped
Directions:
- Preheat oven to 175°C. Line a baking sheet with parchment paper.
- In a medium bowl mix flour, baking powder and salt.
- In another bowl mix butter, sugar and vanilla sugar until light and creamy. Beat in egg. Then gradually blend in the flour mixture.
- Add in nuts, apricots and chocolate chips and stir until they are well-distributed in the batter.
- Shape cookie dough into balls and arrange on prepared baking sheet, leaving about 5 cm between the cookies to allow for spread. Spress cookie balls with fingers to flatten.
- Bake for 11-14 minutes, until cookies are light golden brown on the edges.
- Allow to cool on baking sheet for 3-4 minutes, then transfer to a wire rack to cool completely. Enjoy!

Cookies Puppies
At last I made these little puppies too. My daughter asked to give her something that she could treat her kindergarten group children. So good mother rolled up her sleeves and started to word ? This work was only pleasure. Of course it needed some time but these puppies are really worth it.
Mini pie with pumpkin and prunes
These mini pies are very good way to use pumpkin or pumpkin puree. I and my hubby like them very much, but the kids do not. My mother asked to bake them because she wanted to take them to her work and that is the best proof to me that they taste great 🙂
Swirl Pumpkin Brownies
Yes, I still have pumpkin puree 🙂 And this time it’s not so healthy but very chocolate brownie. It’s really easy, just I baked 10 minutes more. The next time, I will bake only 5 minutes more. And also, when I baked it second time I used less sugar, and my big girl tasted that. My hubby also agreed that brownie second time was not so good as the first time. So the third time I won’t change anything – these proportions are really perfect!
Puffed rice with dried fruits
At first I was very sceptical about this recipe, because I thought that butterscotch and dried fruits won’t fit together. I was wrong and I am very happy about that 🙂 Dried fruits are perfect here, the dessert is not too sweet because of them.
Muffins with rhubarbs and walnuts
At last this hear I grew some rhubarbs. And baked this muffins in June, but they appear on my blog only now. Sorry 🙂 These muffins are soft and I recommendto bake them in paper forms. I sprinkled some with cinnamon mixture, some didn’t. My hubby decided that with cinnamon is better. And I, cinnamon lover, can’t disagree with him 🙂
