Once girls from Kaunas invited me to join small party called “50 cocoa shades”. I scrolled a lot of recipes and tried three of them, but only one was the one (others were good enough to eat, but just it). These nuts are very contagious – you start to nibble and forget to stop. They are not too sweet, you perfectly taste hazelnuts, so I liked them very very much.

Cocoa dusted hazelnuts

Time needed:
Yields: 8 servings
Calories: 160 kcal / 1 serving

Ingredients:
1 cup = 237 ml

  • 2 cups hazelnuts (or other nuts, almonds suits perfectly too)
  • 1 tsp. vanilla sugar
  • 2 tbsps. cocoa powder
  • 1 egg white
  • 1/4 cup agave syrup, golden syrup or honey
  • 1/4 tsp. salt
  • For nut coating:
  • 2 tsps. cocoa powder
  • 2 tsps. icing sugar

Directions:

  • Preheat oven to 135˚C. Line baking tray with silicon mat or baking paper.
  • Mix all ingredients, except nuts, in a bowl. Then add nuts and mix to coat them. Pour into the baking tray.
  • Bake in an oven 35-40 minutes, mixing every 10 minutes. In the end of baking be carefull and watch out of nut burning (everytime I bake 40 minutes, but didn’t met this situation).
  • Leave nuts to cool in a baking tray. Then sprinkle them with cocoa powder and icing sugar mixure, mix well.
  • Put hazelnuts in a beautiful bowl. Leftover of cocoa and icing sugar put in a small jar – you can use it again if nuts will start to stick.
  • Enjoy!

And these cookies are perfect – you can form a log and then put in a freezer for later bake, when you will have no spare time.
