These healthy muffins are extremely moist and delicious.

Banana muffins

Time needed:
Yields: 12 servings
Calories: 281 kcal / serving

Ingredients:

  • 300 ml flour
  • 150 ml wheat or oat bran
  • 2 tsps. baking powder
  • 150 ml sugar
  • 100 g walnuts
  • 100 g butter
  • 1 egg
  • 2 bananas, ripe
  • 50 ml dark syrup (I used honey)
  • 150 ml sour milk or yoghurt

Directions:

  • In a big bowl mix flour, bran, baking powder sugar and chopped walnuts.
  • Melt the butter and mix with an egg, mashed bananas syrup and sour milk.
  • Pour this mixture into the bowl with dry ingredients and mix carefully.
  • Divide the batter between buttered muffin moulds. Bake at 190°C preheated oven about 20-25 minutes.
  • Let rest baked muffins in the moulds about 10 minutes and only then take them out and let cool completely.
  • Enjoy!

Basic Biscotti

I have not one biscotti recipe, but for the first time I decided to bake the simplest kind – basic. I was afraid that simple ones look like rusk, so I decorated them with dark and white chocolate. At the office, we laugh that I brought them rusks but anyway biscotti disappeared quickly. And for afternoon tea/coffee there were only a few biscotti left.

Crepes stuffed with broccoli and cheese

I’m very excited when the recipe which I chose to prepare is admitted 110 percents. I wanted to make these crepes all week long, but all week I had no time to spend in the kitchen. And only this weekend the time has come 🙂 I’m very glad that I made only half portion because if there were more than four crepes I couldn’t stop eating. The filling is so light, with the gentle taste of broccoli and very nice taste of cheese. My hubby said he wasn’t hungry but ate one crepe and was very excited 🙂 The next time I will not make our usual crepes with cheese filling, but give a little bit more time and make these crepes.

Muffins with rhubarbs and walnuts

At last this hear I grew some rhubarbs. And baked this muffins in June, but they appear on my blog only now. Sorry 🙂 These muffins are soft and I recommendto bake them in paper forms. I sprinkled some with cinnamon mixture, some didn’t. My hubby decided that with cinnamon is better. And I, cinnamon lover, can’t disagree with him 🙂

We just love tortillas. I tried this recipe more than once. Every time disappears very quickly, because my kids and me just eat them warm plain. My hubby doesn’t adore pastry, but he enjoys eating tortillas with some filling. So I really recommend to try – it’s simple, quick and better one hundred time than store bought.
