Very quick and healthy cottage cheese cakes. You can prepare them in 5 minutes and then, while they are baking, you can prepare salads or food for other family members, who don’t want to eat so healthy.

Baked cottage cheese cakes with bran

Time needed:
Yields: 2 servings
Calories: 133 kcal / 1 serving

Ingredients:

  • 250 g cottage cheese
  • 1 egg white
  • 1 tbsp. whole wheat or rye flour
  • bran for coating
  • salt

Directions:

  • Preheat the oven to 180°C.
  • Combine cottage cheese, flour with egg white. Season with salt. Form six balls, coat them with brans, lightly press with a palm of your hand. Lay the flattened cakes on a baking tray and bake for 30-40 minutes.
  • Enjoy with sour cream or salads!

This our new breakfast. It’s quick, easy, fresh and tasty. Now the weather is too cold for smoothies, baked eggs are boring and my family doesn’t eat much sandwiches. Last year for Christmas I bought the book Wheat belly, and I liked it so much that in January I didn’t give my family any wheat. At first it as very strange, unusual, but then we got used to it very quickly. But what I liked most – this gave me a kick to look for something new. That’s how I found these pancakes and this year we made them not once or twice. Sometimes I bake them as usual pancakes, sometimes in waffle iron. Both ways we like them. Every time these pancakes comes out very fluffy and light. And they spread in a pan a lot, so make space for them. And if you like to eat pancakes without any add-ons, I suggest to add a little bit more sugar or pour over them some tasty syrup.

Sometimes my body doesn’t like combination flour+meat, but in those moments we can substitute meat with cottage cheese and make delicious hand pies. My all family enjoyed them and 12 was enough only for three people, but not four 🙂 So next time I’ll have to prepare double portion that everyone cold be happy. 🙂

Once great grandparents brought from the farmer market home made cottage cheese for there beloved grandchildren. But the cheese wasn’t so delicious as everyone wanted so for a long time it sat quietly in the corner of a fridge and waited. But the day has come when this cheese was used for unsweetened cookies, that tasted something between cookies and baked cottage pancakes. Everyone was happy – children, because they got tasty snack, cottage cheese – because at last he was useful, and parents – that didn’t throw away spend money.

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉
