Last year for Christmas I bought the book Wheat belly, and I liked it so much that in January I didn’t give my family any wheat. At first it as very strange, unusual, but then we got used to it very quickly. But what I liked most – this gave me a kick to look for something new. That’s how I found these pancakes and this year we made them not once or twice. Sometimes I bake them as usual pancakes, sometimes in waffle iron. Both ways we like them. Every time these pancakes comes out very fluffy and light. And they spread in a pan a lot, so make space for them. And if you like to eat pancakes without any add-ons, I suggest to add a little bit more sugar or pour over them some tasty syrup.

Cottage cheese and corn flour pancakes

Time needed:
Yields: 4 servings
Calories: 324 kcal / serving

Ingredients:
1 cup = 237 ml

  • 1 cup corn flour
  • 200 g cottage cheese
  • 2 eggs
  • 1 1/2 tbsps. sugar
  • 1 tsp. baking soda
  • 1 tsp. vanilla sugar
  • 1 1/3 cup natural yoghurt

Directions:

  • Beat eggs with sugar and vanilla sugar until sugar dissolves.
  • Add baking soda to yoghurt, mix and then pour it to egg-sugar mixture.
  • Add cottage cheese and mix. If cottage cheese is very grainy, you can grind it with hand held blender until solid consistency.
  • Last, add flour and mix with spoon.
  • Bake in a dry pan with non-stick coating.
  • Add chosen condimental to the pancakes or pour with syrup and enjoy!

Fruit and cottage cheese dessert Softness

Refreshing and easy dessert with the last strawberries. To say the truth, I prepared double portion so I had to use wild strawberries too in companion with strawberries. Definitely I will prepare this dessert with other berries or fruits. This recipe is from my children recipe archive. So if you add mild and sweet fruit, you can surely sweeten kids stomach. Just I really recommend to chill before serving – because then cream becomes stronger.

There is no secret – we like groats with curd :). Long time ago I tried this recipe, so this time I made it again. It was very tasty for all of us. We ate with sour cream. Only next time I will try to make porridge not so stiff :). I need more practice cooking porridge because I never get the same consistence :).

Lately my family doesn”t want any bakes. But this recipe was the only one that I liked and wanted to prepare for the Rice week. I said that I”m gonna make it you like it or not 🙂 And only when I saw how my family was eating this bake I remembered that rice and curd are the most favourite ingredients so this bake had to be a hit from the beginning. And one more point for this bake – it”s just slightly sweet. That”s why I heard compliment from my hubby. He said that this bake is probably the best that he ever ate 🙂 So you look at the last piece of bake 🙂 and it disappeared very quickly after I did some shots.

I make this bake with my first zucchini that grew in our garden. In my archive I didn’t find the recipe that I could follow, so I fantasized a little bit and make bake with cottage cheese and zucchini. My family enjoyed it a lot. And even when I baked it again, all disappeared in one sitting. So please, bake and enjoy it too!
