Rice bake with curd

Lately my family doesn”t want any bakes. But this recipe was the only one that I liked and wanted to prepare for the Rice week. I said that I”m gonna make it you like it or not 🙂 And only when I saw how my family was eating this bake I remembered that rice and curd are the most favourite ingredients so this bake had to be a hit from the beginning. And one more point for this bake – it”s just slightly sweet. That”s why I heard compliment from my hubby. He said that this bake is probably the best that he ever ate 🙂 So you look at the last piece of bake 🙂 and it disappeared very quickly after I did some shots.

Rice bake with curd

Time needed:
Yields: 3 servings
Calories: 322 kcal / serving

Ingredients:
1 glass = 250 ml

  • 1/2 glass rice
  • 3/4 glass water
  • 1 glass milk
  • 250 g curd
  • 1 tbsp. raisins
  • 1 tbsp. sugar
  • 2 eggs
  • 1 tbsp. sour cream
  • butter, for greasing baking dish
  • dried bread crumbs, for coating baking dish

Directions:

  • Boil rice on water and milk. Let cool.
  • Mix in one egg, beaten with sugar, curd and raisins.
  • Grease baking dish with butter and coat with dried bread crumbs.
  • Pour rice-curd mixture.
  • On top pour egg, beaten with sour cream.
  • Bake in 200°C preheated oven about 20 minutes.
  • Enjoy!

I decided to prepare something new for our already boring quick menu. This dish is very quick, if you do like me – boil chicken a day before. My hubby commended. I asked him maybe the dish is so good because almost all the week we ate what we had on hand? My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face 🙂 He even wasn’t disturbed that in this stew was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

Cottage cheese and rye flour balls, or cookies?

The author of this recipe says it’s cookies and in her blog they really look like cookies. In my case, they are balls and the texture is between cookies and buns. Therefore, we call them just balls. The first day they have crispy exterior and the next they are all soft. In my family, they are enjoyed in all forms. Just I have to hide some if I want to enjoy them next day. By the way, you can see from the ingredient list that all sweetness comes from just one tablespoon of honey, so in our opinion they are not cookies at all 🙂 But if you will enjoy them with a sweet drink, they will be perfect companions.
