A little bit not ordinary cookies. You can’t taste zucchini, just it’s green skin says that cookies has a secret in side. Next time I will use quick cooking oats, because now I used old fashioned and eating cookies I could feel hard oats.
Zucchini Cookies with Chocolate Chips and Dried Cranberries
Time needed:
Yields: 40 cookies
Calories: 99 kcal / cookie
Ingredients:
1 cup = 237 ml
- 1 1/4 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3/4 tsp. cinnamon
- 4 tbsps. (55g) unsalted butter, room temperature
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar (didn’t used)
- 1 tsp. vanilla extract
- 1 large egg
- 1 cup shredded zucchini
- 2 cups old fashioned oats (next time I will use quick cooking oats)
- 1 cup semisweet chocolate chips
- 3/4 cup dried cranberries
Directions:
- Preheat the oven to 180°C. Line a baking sheet with baking paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large mixing bowl, combine butter and sugars, mix until smooth. Add egg and vanilla extract.
- Next, add the shredded zucchini. Mix until combined.
- Slowly add flour mixture until just combined.
- Stir in oats, chocolate chips, and dried cranberries.
- Drop cookie dough by heaping tablespoonfuls 2 inches apart onto baking sheets.
- Bake for 15 minutes or until golden.
- Remove cookies from pans, cool completely on wire racks.
- Enjoy!

Chocolate cake with apples
This recipe waited for a year because last year somehow I was late – apples were gone, and I didn’t want to buy them. So this year this is my first (and the only) apple cake. And it was a really good cake! I baked only half of the recipe, but I got only one slice – my kids ate almost half of it at once. I could treat my parents only with the small slices… The cake is very moist and in reality it looks better than in the book. And I won’t judge my photos 🙂
Simple oatmeal cake
This cake is not very sweet, so if you like sweeter add 1 cup of sugar. That I did when baked second time. Because of the bigger sugar amount batter was more runny so I skipped sour cream. The cake came out very good and everyone agreed that this time it was better. Cake with zucchini
Very delicious cake and zucchini just gives a lot of moistness. I baked it five times this summer and every day it disappeared very quickly. At last I left some cake for photography and next day when I had a little bit free time I made some photos. By the way, the cake had a lot of moistness even after a few days.
