Banana zucchini muffins

Banana makes these muffins smell very nice and zuchhini gives moisture. The good thing that you can use freezed grated zucchini (just squeeze the juice very good).

Banana zucchini muffins

Time needed:
Yields: 12 muffins
Calories: 210 kcal / muffin

Ingredients:
1 cup = 237 ml

  • 1/3 cup oil
  • 1/2 cup sugar (I used 100 ml)
  • 2 eggs
  • 1 3/4 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • pinch salt
  • 2 ripe bananas, mashed
  • 1 cup zucchini, grated
  • 1/2 cup walnuts, chopped (optional)

Directions:

  • Preheat oven to 180°C.
  • Cream together oil and sugar.
  • Add eggs and banana, beat well.
  • Sift together dry ingredients, add to creamed mixture.
  • Add zucchini and stir well. Stir in nuts.
  • Pour batter into muffin pan.
  • Bake for 30-35 minutes.
  • Let cool on wire rack.
  • Enjoy!

Somehow I baked pancakes long time ago. So came the time when I started to miss them. And I guess my all family miss them too, because these polenta pancakes disappeared very quickly. If you don’t have polenta or lazy to grind corn groats, you can use corn flour. You just have to use more milk.

It was really impulsive baking. I saw them in a magazine for parents in a section “Baking together”. 🙂 Together? So I asked if my kids want to bake something and they happily agreed. So I just measured all ingredients in purpose that my kids were not bored, and they started to work. The result came out perfect – smell was fantastic, and the taste was remarkable – berries gave some refreshing sourness and banana gave moisture. Even next day they were very good and left over disappeared too quickly. So I’m thinking to repeat them very soon again.
