Zucchini muffins with cheese

We like to eat these muffins for afternoon snack when we don’t want anything sweet. I make mini muffins so they are perfect for little children hands. They disappear very quickly.

Zucchini muffins with cheese

Time needed:
Yields: 12 mini muffins
Calories: 63 kcal / mini muffin

Ingredients:

  • 300 g zucchini
  • 120 g cheese, grated
  • 1/2 medium onion
  • 2 tbsps. cornstarch
  • 1/2 tsp. black pepper
  • 1 tbsp. sugar (optional)
  • 50 ml dill and parsley, chopped
  • 3 medium or 2 large eggs

Directions:

  • Grate zucchini and squeeze out the liquid.
  • Using a bit of butter stir-fry the onion, then add grated zucchini and stir-fry for 3-5 minutes more, add pepper, sugar and leave to cool.
  • Whisk the eggs together with cornstarch, add chopped herbs, grated cheese and zucchini.
  • Mix well until combined and spoon into the greased muffin tins.
  • Bake at 180°C for 15-18 minutes.
  • Serve muffins with sour cream, as a separate meal or as a garnish.
  • Enjoy!

This weekend my kids were just amazing. They made these hot sandwiches alone, without my help. They even concurred their fear of the oven and the heat. The first day actually I helped them with the oven a little bit, but the next morning – me and my hubby had breakfast in bed, because my kids did everything on their one! Our eyes were wide open out of the pride what grate kids we are have. I love my kids!

I think this is the last recipe with pasta for some time. Now I’ll take a break from pasta because now we eat a lot of salads, barbecued meat and everything we find in the freezer. Unfortunately I had only one third of cheese, but it didn’t ruined the taste.

I make this bake with my first zucchini that grew in our garden. In my archive I didn’t find the recipe that I could follow, so I fantasized a little bit and make bake with cottage cheese and zucchini. My family enjoyed it a lot. And even when I baked it again, all disappeared in one sitting. So please, bake and enjoy it too!
