The author of this recipe says it’s cookies and in her blog they really look like cookies. In my case, they are balls and the texture is between cookies and buns. Therefore, we call them just balls. The first day they have crispy exterior and the next they are all soft. In my family, they are enjoyed in all forms. Just I have to hide some if I want to enjoy them next day. By the way, you can see from the ingredient list that all sweetness comes from just one tablespoon of honey, so in our opinion they are not cookies at all 🙂 But if you will enjoy them with a sweet drink, they will be perfect companions.
I still afraid to use rye flour in sweet baking, but these balls really fit here and encourage me to try other sweets with them.
Cottage cheese and rye flour balls, or cookies?
Time needed:
Yields: about 27 balls
Calories: 42 kcal / serving
Ingredients:
- 200 g cottage cheese
- 50 g butter
- 1 tbsp. honey
- 1 egg
- 100 g rye flour
- 1 tsp. baking powder
- 1 tsp. vanilla sugar
Directions:
- Preheat oven to 180°C temperature.
- In a small bowl melt butter and honey.
- In a bigger bowl mix all ingredients. You should get sticky dough.
- Line baking tray with baking paper.
- With wet hands form small balls from the dough. Put balls on baking tray 2cm apart.
- You can press slightly with fingers, if you want to get cookies, not balls.
- Bake in an oven about 15-20 minutes.
- Enjoy!

Wild strawberries with sour milk
Quick and easy drink or dessert. I made it for kids and they liked it a lot. It’s a pity that these berries were the last in our garden.

Sourdough rye bread
I bake this bread more then a year. But as always, the best recipes hardly reach the blog 🙂 Because I bake it very often and know all ingredients in my head. This bread is perfect. Really 🙂 After founding this bread I don’t buy any bread at store. Or maybe just in big gatherings when I don’t have time to bake more of this bread. 🙂

Rye bread sticks with flaxseeds
Healthy snack that all my family enjoy. I baked them twice. First time whole flaxseeds I added on top of breadsticks but they easily dropped of, so next time I put them inside the breadsticks and we like it that way.

Cottage cheese and corn flour pancakes
Last year for Christmas I bought the book Wheat belly, and I liked it so much that in January I didn’t give my family any wheat. At first it as very strange, unusual, but then we got used to it very quickly. But what I liked most – this gave me a kick to look for something new. That’s how I found these pancakes and this year we made them not once or twice. Sometimes I bake them as usual pancakes, sometimes in waffle iron. Both ways we like them. Every time these pancakes comes out very fluffy and light. And they spread in a pan a lot, so make space for them. And if you like to eat pancakes without any add-ons, I suggest to add a little bit more sugar or pour over them some tasty syrup.
