Cottage cheese and potatoes dumplings

At first I just wanted to make photo and upload it to Mano receptai.lt. But when my family tasted them, I understood that they are really good and they deserve to be posted here. I have tried to boil cottage cheese and potato dumplings without the recipe, bet they never tasted as good as these. I think the secret is good cottage cheese and potato proportions. So I really recommend to try this a little bit simplified version of dumplings.

Cottage cheese and potatoes dumplings

Time needed:
Yields: 4 servings
Calories: 395 kcal / serving

Ingredients:

  • 150 g flour
  • 400 g cottage cheese
  • 250 g boiled potatoes
  • 3 tbsps. butter
  • 2 tbsps. potato starch
  • 2 eggs
  • salt

Directions:

  • Mince boiled potatoes or grade with fine grater.
  • In a bowl mix all ingredients.
  • On a floured surface roll dough in a log and cut in 3 cm pieces.
  • Boil in salted water till they flow to the surface and 1 minute more.
  • Serve with your favourite sauce – ours favourite is sourc cream and butter.
  • Enjoy!

This our new breakfast. It’s quick, easy, fresh and tasty. Now the weather is too cold for smoothies, baked eggs are boring and my family doesn’t eat much sandwiches. But these are different because greens brings freshness. So if you are bored from sandwiches with ham or cheese, you should try these.

One more delicious thing from ordinary products. It’s not very sweet but that’s what we need after holidays 🙂 Also it’s very good for using up stale bread. To tell the truth neither I or my husband expected that it will be so delicious. Kids liked it too. When we tasted this dessert at the same day, the bread crumbs were very crunchy, the next day – they became soft, but both days it was real pleasure to eat it.

Bored of eating potatoes and cabbages? Don’t know what to do with them? This is the solution I found yesterday on the internet. It’s a little bit time consuming, but it’s cheap. A day before a boiled potatoes and an egg, braised cabbage with onion. So the next day I had only to form pancakes and bake. My hubby was nicely surprised with the taste, and I – with the smell (I remember it from my childhood).

Cottage cheese and boiled potato bake

Potatoes and cottage cheese – it’s always a great company. So why not to combine them in to a bake. It can be prepared within a few minutes. I found this recipe in Russian magazine about child-caring, but significantly changed by our observations: original recipe asks to slice the potatoes, but we prefer grated because it distributes better; original asks to pour more milk, we prefer the more eggs, and this bake comes out stronger. For us our experimentations came out super tasty. So, honestly, I urge you to try it too 😉
