Cucumber bites with cottage cheese

Very refreshing and easy snack. If you will use blender, you will prepare it in minutes. Taste was very similar to cold beet soup just without beets.

Cucumber bites with cottage cheese

Time needed:
Yields: 4 servings
Calories: 60 kcal / 1 serving

Ingredients:

  • 100 g cottage cheese
  • 1 long cucumber
  • 1/2 tomato
  • 1 tbsp. sour cream
  • 1 tbsp. mayonnaise
  • dills

Directions:

  • Cut about 10 cm cucumber into small cubes and mix with cottage cheese.
  • Add finely chopped tomato, dills, sour cream and mayonnaise. Mix everything or you can use blender.
  • Cut leftover cucumber into 0,7-0,8 cm slices.
  • Put cottage cheese mixture on cucumber slices and serve.

We like cottage cheese bake, so I have already tried a lot of versions like simple cottage cheese bake, cottage cheese and pasta bake, cottage cheese and vanilla pudding bake and cottage cheese and rice bake. This time I tried with couscous. Everyone tastes a little bit different but we like them all. And it’s good to know that everytime I can choose by my refrigerator content.

Once great grandparents brought from the farmer market home made cottage cheese for there beloved grandchildren. But the cheese wasn’t so delicious as everyone wanted so for a long time it sat quietly in the corner of a fridge and waited. But the day has come when this cheese was used for unsweetened cookies, that tasted something between cookies and baked cottage pancakes. Everyone was happy – children, because they got tasty snack, cottage cheese – because at last he was useful, and parents – that didn’t throw away spend money.

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉

For the first time in my life I ate sweet buckwheat bake ? I don”t use buckwheat preparing food. Mostly we eat them only cooked with a lot of butter, and sometime we add some curd into them. But it”s boring, and this bake was something new. We ate it with strawberry jam and it was really tasty. I made a photo of the last piece that I grabbed from my husband plate ? That means that this recipe is really great. Though in the beginning I was very sceptical.
