This dinner was very delicious and quick and it reminded me the spring when almost every meal was with a huge bowl of salads and a little bit meat for satiety. I baked chicken on electric grill and it was done in 10 minutes. It gave just enough time to chop my salads. I just love to have recipes that are appreciated by my family and at the same time are very quick.

Chicken breast with curry and lemon peel

Time needed:
Yields: 4 servings
Calories: 214 kcal / serving

Ingredients:

  • 1/2 lemon peel, grated only yellow layer
  • 2 cloves garlic
  • 2 tbsps. dills (I used frozen)
  • 1 1/2 tsp. curry powder
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/2 tsp. ground black pepper
  • 2 tbsps. olive oil
  • 4 small chicken breast (I used chicken breast for stakes)

Directions:

  • Wash chicken breast and pat dry with paper towel.
  • Put all other ingredients in a bowl and mix.
  • Rub chicken breast with marinate, cover and let marinate for 1-4 hours in a cold place.
  • Turn on the grill.
  • Place chicken on a grill and bake 5 minutes. I covered mine with a sheet of foil, that assured me that my grill will bake chicken perfectly.
  • Turn chicken once and bake 5 minutes more. If you like you can cover with foil too.
  • Take baked chicken out of the heat and let rest for a few minutes before slicing.
  • Serve with salads!

Smoked chicken breast and broccoli salads

When my mother on the weekend told me about the salads that she tasted at work, I was sceptical. And when she decided to prepare it for us, I was afraid (our taste is very different). But I’m glad that she did it, because we liked it a lot. It’s better to say that grown ups liked it, because my kids didn’t like onion and broccoli. Mayonnaise doesn’t make these salads healthy but for a quick dinner they were very good.

One more easy and simple, as a lot of others, chicken dishes. I decided to try something new, because I”m a little bit tired to prepare chicken in a cream sauce and all the time overeat. This recipe is a little bit similar, just new seasons gives the new taste. And really don’t remember, we overate or didn’t 🙂

Sometimes even when at home there is only a few products, you still can prepare satisfying meal. For this one you only need to buy canned tomatoes and chicken breast, other products – I guest almost everyone have at home. But I have to tell you this time you will have to spend some time preparing tomato sauce, but it’s worth that. I like it even more than store bought. But my kids don’t agree with me 🙂 But everyone has the right to choose.

Hearts and carrot stew

If the past time was a healthy recipe, now it’s the cheap one. After all, you need to have all kinds of options. I made this stew for three times because we couldn’t decided we like it or not. The second time I made it, carrots had too strong taste and we didn’t like it. So choose young, crisp and tasty carrots and everything will be fine. Our children do not eat this sort of misunderstandings , so me and my hubby enjoyed it for lunch. And the last time it was so delicious that we ate more than we should. 🙂

Baked chicken livers with onion and tomato sauce

From the childhood we all know that livers are very healthy to eat, but knowing doesn’t mean that you do it. One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.
