It’s really very simple stew and seasonings play here the main role. So you should use the ones that your family loves and the quantities that are good for you. Make experiment and enjoy it! As you can guess you can substitute turkey with chicken. We tried it already and we didn’t noticed the difference.

Turkey and rice stew with carrots and green peas

Time needed:
Yields: 4 servings
Calories: 364 kcal / serving (if sauce make on water)

Ingredients:
1 cup = 237 ml

  • 4 carrots
  • 2 medium onions
  • 200 g rice
  • 400 ml chicken broth (or water + chicken boullion cube)
  • 400 g turkey or chicken fillet
  • 1/2 cup green peas, frozen
  • salt
  • black peppers
  • chilli peppers
  • curry powder
  • some oil

Directions:

  • Wash rice with running water and leave to drip excess water.
  • Peel carrots and slice them.
  • Clean onions and cut in half-rings.
  • In a large pot with a thick bottom heat the oil. Add one onion and fry it.
  • Add carrots and fry a few minutes.
  • Add to the pot rice, mix and pour in a pot broth.
  • Season with salt, peppers and curry.
  • When broth starts to boil, lower the temperature and boil rice for 20 minutes.
  • Meanwhile in a pan with a small amount of oil fry the other onion.
  • Add to the pan turkey fillet, sliced in stripes. Mix and season with seasonings. Fry till turkey will be white inside.
  • When rice will be ready, add green peas. Cover the pot and let sit for a few minutes.
  • Carefully mix rice with green peas and put it in a plates. On top put turkey with onions.
  • Serve immediately. Enjoy!

If the past time was a healthy recipe, now it’s the cheap one. After all, you need to have all kinds of options. I made this stew for three times because we couldn’t decided we like it or not. The second time I made it, carrots had too strong taste and we didn’t like it. So choose young, crisp and tasty carrots and everything will be fine. Our children do not eat this sort of misunderstandings , so me and my hubby enjoyed it for lunch. And the last time it was so delicious that we ate more than we should. 🙂

And even if you are not used to cinnamon in non sweet meals, I can say that in here it gives only a very mild aroma and a good pinch of bitterness and cosiness. And paprika has a lot of vitamin C, so it’s really good if you don’t want to get cold.

I adore lemon in all dishes, maybe except in yeasted buns 🙂 And I am very happy that my family feels the same. Long time ago I prepared chicken Piccata by Forelle recipe. This was also great, just there is sauce more and lemon more 🙂 I guess the best would be the combination of my and Forelle recipes – more sauce and lemon juice in moderation.

I decided to prepare something new for our already boring quick menu. This dish is very quick, if you do like me – boil chicken a day before. My hubby commended. I asked him maybe the dish is so good because almost all the week we ate what we had on hand? But he assured that no and ate almost everything, leaving just a few bites for my next day lunch… You can enjoy these salads and cold, and warm.
