I’m happy and proud. This cake is not just tasty but very cute 🙂 It was made for my daughter’s 5th birthday. But presenting it only now because somewhere at this time my blog is celebrating 3 year old birthday and at the same time I celebrated my birthday anniversary. But this year birthday was different – I didn’t do anything, just celebrated 🙂

Almond cake with mascarpone “Hello Kitty”

Time needed:
Yields: 16 servings
Calories: 273 kcal / serving

Ingredients:

  • Almond sponge:
  • 3 eggs
  • 110 g icing sugar
  • 110 g almonds, ground
  • 15 g cocoa
  • 25 g butter, melted
  • 30 g flour
  • 100 g (~3 units) egg whites
  • 15 g sugar
  • Mascarpone cream:
  • 500 g mascarpone
  • 375 ml cream, 36% fat
  • 1 tsp. vanilla essence
  • 100 g white chocolate
  • 100 g sugar
  • For sponge watering:
  • 250 ml cherry compote, homemade and not diluted

Directions:

  • Sponge baking: Beat eggs with the sugar powder and grind almonds, while mixture will be fluffy and will double. Carefully mix in cold melted butter and flour, sifted with cacao. Beat egg whites, gradually adding sugar, till stiff foam. Carefully mix in egg whites to the mixture. Line baking form 24cm diameter with baking paper. Pour in mixture and bake in preheated till 180°C oven about 30 minutes (check with wooden pick). Let cool and then cut into 3 parts.
  • Preparing cream: Mix marcapone with 50 g of sugar and vanilla. Leftover sugar gradually mix in to beating cream. On steam melt chocolate. Mix marcarpone mixture with chocolate and then mix in cream.
  • Cake gathering: Put first sponge layer on a cake plate. Put cake form borders around it. Water sponge with compote and put on the top one-third of the mascarpone cream. Then put second sponge layer. Push slightly with hands, water with compote and put second layer of cream (also one-third). Put the last sponge layer, and also water with compote. On top put some mascarpone cream, but not all – leave some for sides of cake. Put cake to the refrigerator for 2 hours or more. Later take off borders and cover sides with the leftovers of mascarpone cream. Decorate cake with fantasy. In this case I used beaten cream, melted chocolate with some cream, sprinkles and cookie decorating glaze.

This year my little boy turned 4! And this is his cake. I spend a lot of time looking for the right cake. The choice was good! Maybe a little bit cream was fat, but it was tasty. Also I drizzled sponge with cherry compote. For 6 people the cake was too big, so leftovers I freezed and now I can enjoy it with the afternoon coffee 🙂

I have no time to do nothing 🙂 My job is taking all my time. Good news that it will not last forever. So I have no time to bake cookies or pies, but it doesn’t stop me from wanting some sweets. And these cookies are perfect – you can form a log and then put in a freezer for later bake, when you will have no spare time.

Don’t know why but this autumn I’m hooked on beetroots. Every weekend I boil some beetroots and through the week I incorporate them in our dishes. And then story repeats. When I wanted for dinner something light, I prepared these salads. By the way, this recipe in the book is called carpaccio, but I think it’s more salads, and the name is more usual and not so fancy 🙂 . Family girls enjoy them, the big boy ate them and just said that more balsamic vinegar would be better, and the little boy as always, prepared some theater and then ate them, just without enjoyment. So I remember these salads as they are fit for girls 🙂 And I prepared very similar salads with hazelnuts, and they were very good too. So as always – don’t be afraid to experiment and correct ingredients by your refrigerator or cupboard products.

Chocolate chip cookies with nuts and apricots

The first time I baked these cookies with my daugther. They were very delicious and very sweet. So next time I used less sugar, but they spread less while baking. Here I give you proportions with less sugar because I like when cookies are cookies and not candies 🙂 By the way, when I used hazelnuts my hubby said to leave them at home (didn’t let to take them to my work) 🙂 So it says everything about the taste of these cookies.

Almond chicken fingers

These chicken fingers are very good. A lot of spices are used in the recipe, but the combination is perfect. Only cayenne pepper you should add according to your taste. When I prepare this chicken to my children, I add only half of it, but in the original it is used twice as much. Fingers are prepared very quickly, and the most exciting thing that it doesn’t need time to marinate, and later you don’t have to stand near the pan. For your health – it’s only for the good. We ate this chicken already many times, sometimes just as fast food – with some sauce and pickles or oven ​​fried potatoes. This time we had it for dinner with some vegetable stew, ordinary enough, but still everything was good and we liked it.
