If you like sour and sweet cakes like us – this is for you. I was afraid that it will be too sour but is was really good.

Cranberries and chocolate cake

Time needed:
Yields: 16 servings
Calories: 313 kcal / serving

Ingredients:

  • For the base:
  • 350 g chocolate cookies
  • 150 g butter
  • For the cream:
  • 5 tsps. gelatine
  • 100 ml water
  • 400 g cream cheese
  • 400 ml cream, 35% fat
  • 350 ml cranberries
  • 200-300 ml sugar
  • For the topping:
  • 100-200 ml cranberries

Directions:

  • Crumble cookies and mix with melted butter.
  • Rectangular form 22×32 cm (I used 26 cm diameter cake form) line with baking paper.
  • Pour in form cookie-butter mixture and flatten evenly. Put form in a fridge for 2 hours.
  • Pour water over gelatine and let it bloat for 5 minutes. Then melt on a low heat.
  • Blend cranberries with sugar and mix in cream cheese.
  • Beat cream till forms fluffy foams and carefully mix it in the cream cheese-cranberry mixture.
  • Slowly add melted gelatine to the cream.
  • Pour cream over cookies base and sprinkle with cranberries. Put in a fridge for 4 hours or all night.
  • Enjoy!

I chose this cake because it was with lemon, so had to be refreshing, and it was in butterfly shape – it had to fit for my daughter’s birthday, because she love every creature that is alive 🙂 And I was wright! The cake was very good! I baked only half portion, but it was really enough for 6-8 people. Only next time I would bake only 2/3 of sponge, because we like when cake is almost all of cream and sponge is a very thin layer. But you should decide by yourself.
