Honey-Peach Ice Cream

This week in supermarket we bought some peaches and they were all so ripe that I grabbed some from my children and decided to try Dorie Greenspan recipe. Some weeks ago it was introduced in Thuesdays with Dorie project ? These ice creams are very creamy, with a mild taste of honey and peach. Just we all agreed that next time I will puree all peaches, because those that I chopped became like little ice cristals and were very very cold ? And in the photo you can see what conditions I have almost all the time photographing my creations 😀

Honey-Peach Ice Cream

Time needed:
Yields: 4 servings

Ingredients:
1 cup = 247 ml

  • 4 large (about 1 kg) ripe peaches, peeled and pitted
  • 1/4 cup honey
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3 large egg yolks
  • 1/2 cup sugar
  • 2 tsps. pure vanilla extract

Directions:

  • Coarsely chop half the peaches into 1 cm chunks and toss them into a small saucepan.
  • Add the honey and bring to a boil, then lower the heat, cover the pan and cook, stirring occasionally until the peaches are soft but not mushy, about 10 minutes.
  • Scrape the mixture into a blender or food processor and whir to puree. Set the peach puree aside while you make the custard.
  • Bring the milk and cream to a boil in a medium heavy-bottomed saucepan.
  • Meanwhile in a medium bowl, whisk the yolks and sugar together until very well blended and just slightly thickened.
  • Still whisking, drizzle in about one third of the hot liquid – this will temper, or warm, the eggs so they do not curdle. Whisking all the while, slowly pour in the remaining liquid.
  • Pour the custard back into the pan and cook over medium heat, stirring without stopping, until the custard thickens slightly. The custard should reach at least 75°C, but no more than 80°C.
  • Immediately remove the pan from the heat and pour the custard into clean heatproof bowl. Stir in the vanilla and the peach puree.
  • Refrigerate the custard until chilled before churning it into ice cream.
  • Scrape the chilled custard into the bowl of an ice cream maker and churn according to manufacturer’s instructions.
  • While the ice cream is churning, finely dice the remaining 2 peaches, then, just before the ice cream is thickened and ready, add the peaches and churn to bland.
  • Pack the ice cream into a container and freeze it for at least 2 hours, until it is firm enough to scoop.
  • Enjoy!

Almond cake with mascarpone “Hello Kitty”

I’m happy and proud. This cake is not just tasty but very cute 🙂 It was made for my daughter’s 5th birthday. But presenting it only now because somewhere at this time my blog is celebrating 3 year old birthday and at the same time I celebrated my birthday anniversary. But this year birthday was different – I didn’t do anything, just celebrated 🙂

This year we met at home only with kids. So the preparation for the evening wasn’t much. This cake in all recipe sources got a lot of compliments. I agree with them – it’s really good and simple. I used 26cm cake form. And I really suggest you to warm the mascarpone and condensed milk mixture, because if you won’t do it you’ll get lumps when you pour gelatine (Then I had to put the mixture in a warm bath and wait till mixture warms and lumps dissolve).

Cake Lemon Butterfly

I chose this cake because it was with lemon, so had to be refreshing, and it was in butterfly shape – it had to fit for my daughter’s birthday, because she love every creature that is alive 🙂 And I was wright! The cake was very good! I baked only half portion, but it was really enough for 6-8 people. Only next time I would bake only 2/3 of sponge, because we like when cake is almost all of cream and sponge is a very thin layer. But you should decide by yourself.

Christmas gingerbreads

Yeah, I know… Christmas was last year. But I want to remember this recipe for the future. It’s exclusive because one of the ingredients is sour cream. I didn’t decorate them, because these cookies were for my kids to eat before sleep. And from other side, why I need to decorate them? These cookies are delicious all by them self.

Gingerbread cookies

This gingerbread cookies I baked two times and the second time I made them thinner – these were much more better 😉 It’s sad that ducks, elephants, mice and butterflies didn’t survived till photo session.. By the way, I don’t know why but butterflies were most popular 🙂 Maybe because they were very colourful… This is the last entry about Christmas baking. So what now? Will be waiting for the spring? 🙂
