Sometimes happens that you buy something and forget where you were planning to use it. The same happened with cherry tomatoes. So I used this easy recipe. I was surprised when my hubby liked it, because he doesn’t like basil and oregano.

Cherry tomato tart

Time needed:
Yields: 6 servings
Calories: 322 kcal / serving

Ingredients:
1 cup = 237 ml

  • 1 package (250 g) cherry tomatoes
  • 2-3 small sheets (250 g) puff pastry
  • olive oil
  • salt
  • pepper
  • 1/4 cup chopped herbs (I used basil, oregano and parsley)
  • 1 tbsp. mustard
  • 1 cup cheese (I used in equal parts mozzarella, Rokiskis cheese and Parmesan)

Directions:

  • Thaw the frozen puff pastry.
  • Preheat the oven to 200°C.
  • Meanwhile, cut the cherry tomatoes in half and toss in a bowl with some olive oil, salt, pepper and the chopped herbs.
  • Place the thawed puff pastry on a baking tray lined with baking paper.
  • With a very sharp knife, score the puff pastry all along the sides about 1 cm, to just make a small border.
  • Inside the border, dock the pastry with a fork. Very thinly spread the mustard on the pastry.
  • Sprinkle the cheeses on the mustard and top with the tomatoes (make sure the cut side of the tomatoes are all facing up so that their juice doesn’t make the pastry too soggy).
  • Bake for 15-20 minutes until golden.
  • Enjoy!

Very simple recipe. Parents like it because it’s really quick and kids like it because it’s delicious. Almost everyday I find myself thinking about how to encourage my kids to eat more veggies. These salads are one step closer to my wish. My kids didn’t even noticed chopped chives 🙂 I repeated this recipe several times and both times kids said the same – it’s really good!

My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face 🙂 He even wasn’t disturbed that in this stew was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

Crab sticks salad with tomato

In my family I guess only I eat these crab sticks. So while my kids were still sleeping and my hubby was already working, I tried some recipes with them. This recipe is very quick and easy. Especially tasty with homegrown tomatoes 😉 I enjoyed them on toasted pumpkin bread (that’s why my bread is so yellow). Hope you will like them too!

Crepes stuffed with broccoli and cheese

I’m very excited when the recipe which I chose to prepare is admitted 110 percents. I wanted to make these crepes all week long, but all week I had no time to spend in the kitchen. And only this weekend the time has come 🙂 I’m very glad that I made only half portion because if there were more than four crepes I couldn’t stop eating. The filling is so light, with the gentle taste of broccoli and very nice taste of cheese. My hubby said he wasn’t hungry but ate one crepe and was very excited 🙂 The next time I will not make our usual crepes with cheese filling, but give a little bit more time and make these crepes.

Small cheese pies

Delicious little pies. If I have Vienna sausages, I put them in the filling too and all you have to do is to take tomato sauce for the great food 🙂
