Author: Aušra

Date:

Tomorrow is Monday… Lately half of Sunday I usually spend preparing meals for the coming week. And the best start of the week – a light and healthy lunch. These salads we prepared a few times and I can say that we like it with boiled raw buckwheat, but you can use what you have, or what you like more. Here I present you our version.

Buckwheat salads for lunch

Time needed:
Yields: 2 servings
Calories: 450 kcal / serving

Ingredients:

  • 150 g buckhwheat, raw
  • 8 cherry tomatoes
  • 2 green onions
  • 100 g lettuce(I used 60 g Iceberg lettuce and 40 g spinach leaves)
  • 2 eggs, hard boiled
  • salt
  • peppers
  • 2 tbsps. oil, better use neutral taste
  • 2 tbsps. natural apple cider vinegar (or by your taste)

Directions:

  • Cover buckwheat with water and let soak for the night.
  • Next day wash buckwheat with fresh running water.
  • Put buckwheat in the pot, cover with fresh water, and season with salt and let boil. When buckwheat starts to boil, turn off the heat, and pour off the water. Allow them to cool completely.
  • Divide buckwheat in the lunch boxes.
  • On top add chopped lettuce leaves, green onions, eggs and tomatoes.
  • Pour over salads some oil and apple cider vinegar. Season with salt and peppers.
  • Close lunch boxes and put in a refrigerator until the next day.
  • Enjoy!

Lietiniai su brokoliais ir sūriu

Crepes stuffed with broccoli and cheese

I’m very excited when the recipe which I chose to prepare is admitted 110 percents. I wanted to make these crepes all week long, but all week I had no time to spend in the kitchen. And only this weekend the time has come 🙂 I’m very glad that I made only half portion because if there were more than four crepes I couldn’t stop eating. The filling is so light, with the gentle taste of broccoli and very nice taste of cheese. My hubby said he wasn’t hungry but ate one crepe and was very excited 🙂 The next time I will not make our usual crepes with cheese filling, but give a little bit more time and make these crepes.

Keptos vištienos salotos

Baked chicken salads

Very delicious and satisfying salads. Especially we liked that bell pepper is baked not fresh. I prepared these salads not once and tried with iceberg salad, and with salads form our garden (salads, rucola, sorrel). Every time it was perfect! And depending on vegetables amount you can prepare this salads for 6 or for 3 people. It’s up to you 🙂

Vyšnių pyragas su šokoladu pagal Kas nutiko virtuvėje?

Cherry cake with chocolate

I bookmarked this recipe long ago. And this week everyday after work I thought to bake it, but… This weekend I said “now or never” and I’m happy to say that it was “now”. I baked it from half portion and made a mistake. When my hubby tasted it he said “I my God, you’ll have to bake it again”. The little one was crying near the empty plate pleasing for more 🙁 Good to know that I still have some cherries in the freezer, so they won’t have to wait very long 🙂

Makaronai su švelniu pomidorų padažu

Pasta with tomato cream sauce

I know this photo is not good, but the taste of pasta with this sauce is perfect. It’s mild, it’s creamy and it’s super easy and super quick. Try after a long hard working day!

Tuno pyragas su pomidorais

Tuna pie with tomatoes

Don’t know why but I want to eat fish. So once in a week a prepare from it something. This time it was tuna pie with tomatoes. And believe me – tomatoes are a must in here. They give freshness, that we liked a lot. We had very delicious dinner, and the next day lunch.
