Cookies all alone are very deliciuos so my hubby tried to hide them in his stomach. And when he heard that they will be filled with chocolate he understood that he won”t be able to stop eating them… Sad, but he was wright.

Coconut cookie and chocolate ganache sandwiches

Time needed:
Yields: ~50 single cookies or 25 if sandwiched

Ingredients:
1 cup = 237 ml

  • 1 1/2 cups (190 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 170 g unsalted butter, room temperature
  • 1 1/4 cups (240 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup (80 g) unsweetened shredded coconut
  • Filling:
  • 200 g chocolate, chopped
  • 1/3 cup heavy cream

Directions:

  • Preheat oven to 190°C.
  • Start the butter in a mixing bowl by whipping it on medium-high speed until smooth and creamy.
  • Pour in the sugar and the vanilla extract and beat that in for another 30 seconds.
  • Then add eggs one at a time, and allow each one to mix in completely before adding in the next.
  • In a separate bowl, whisk together the flour, baking powder and salt.
  • Then add it to the mixing bowl. Stir it in on slow speed.
  • Toss in the shredded coconut.
  • Scoop tablespoon-sized mounds on to a parchment lined baking sheet. Space them about 5 cm apart since they spread like they mean it.
  • Bake in the oven about 8-10 minutes or till you see golden edges.
  • For the filling – melt chocolate in the microwave or in a double boiler.
  • Nuke the heavy cream in a microwave safe glass for 40 seconds to get it hot like the chocolate.
  • Pour it over and stir till ganache will be smooth.
  • Fill a pastry bag oufitted with a plain piping tip. Scoop in ganache.
  • Then pipe some ganache on cookie and cover with another cookie.
  • Enjoy!

Pumpkin cutout cookies

I thought to bake these cookies for a long time, but… And one day I took the cup of pumpkin purée from the freezer and used only a half. So the day of that cookies has come 🙂 I rolled those cookies very thinly because I like thin cookies 🙂 Happy that I halved the recipe because I made a lot of cookies, really a lot. I give you the halved recipe.

I bake this bread more then a year. But as always, the best recipes hardly reach the blog 🙂 Because I bake it very often and know all ingredients in my head. This bread is perfect. Really 🙂 After founding this bread I don’t buy any bread at store. Or maybe just in big gatherings when I don’t have time to bake more of this bread. 🙂

One more cake with zucchini. Really great and moist. I didn”t have chocolate chips, but I didn”t miss them in the cake. Maybe with these chips the cake would be more delicious, but also more sinful 🙂

This time I used whole spelt flour, just because whole wheat four I couldn’t get in our store. And measured everything in grams because it’s more convenient for me. I was surprised that I had to use more flour that it was noted in original recipe. Maybe it’s because of spelt flour. So I suggest to add spelt or wheat flour gradually and to see if more is needed.

Oat cookies with chocolate and puffed rice

After a long term there comes the cookies which my daughter liked very very much. Other cookies for her a too dry, she likes only the ones with dried friuts or nuts, or seeds. My son is a “white flour boy”, he can eat all cookies and these cookies were not different 🙂 . Puffed rice gives these crunchy cookies some softness. Chocolate like always gives for the cookies some charminess and while cookies are warm it is still melted and that’s the way my daughter likes 🙂
