Cauliflower bake with cottage cheese

At first when I saw this combination it looked a little bit weird. But then I thought that we all like cauliflowers, cottage cheese and cheese separately, so why not to try it all in one dish. My hubby was very happy 🙂 He ate really a lot. Children also evaluated this dish very good.

Cauliflower bake with cottage cheese

Time needed:
Yields: 4 servings
Calories: 152 kcal / serving

Ingredients:

  • 400 g cauliflower
  • 2 eggs
  • 200 g cottage cheese or curd
  • 50-70 g cheese, grated
  • salt

Directions:

  • Cut cauliflowers into florets and boil.
  • Let cool cauliflower a little bit, then chop and mix with eggs, cheese and strained cottage cheese.
  • Salt to taste, mix very good and pour mixture into buttered heat proof baking dish.
  • Bake about 25 minutes in the preheated till 200°C oven.
  • Sprinkle on top some greens and serve with sour cream.
  • Enjoy!

Layered curd and bread dessert

One more delicious thing from ordinary products. It’s not very sweet but that’s what we need after holidays 🙂 Also it’s very good for using up stale bread. To tell the truth neither I or my husband expected that it will be so delicious. Kids liked it too. When we tasted this dessert at the same day, the bread crumbs were very crunchy, the next day – they became soft, but both days it was real pleasure to eat it.

We just love cottage cheese. But in the long time we were tired of the same cottage cheese bake. So when I found this recipe I knew I have to bake it – I have pudding mix packet bought long time ago. It is really a good way to use it. My kids loved it. And I prepared half of the recipe, but soon I had to repeat it 🙂

Cottage cheese and rye flour balls, or cookies?

The author of this recipe says it’s cookies and in her blog they really look like cookies. In my case, they are balls and the texture is between cookies and buns. Therefore, we call them just balls. The first day they have crispy exterior and the next they are all soft. In my family, they are enjoyed in all forms. Just I have to hide some if I want to enjoy them next day. By the way, you can see from the ingredient list that all sweetness comes from just one tablespoon of honey, so in our opinion they are not cookies at all 🙂 But if you will enjoy them with a sweet drink, they will be perfect companions.

After lunch I had boiled potato leftover, so I let my fantasy take me away 🙂 These arrows are really greate and cheese is here a must. But you should be careful with the salt, because cheese already has it inside.

Last year for Christmas I bought the book Wheat belly, and I liked it so much that in January I didn’t give my family any wheat. At first it as very strange, unusual, but then we got used to it very quickly. But what I liked most – this gave me a kick to look for something new. That’s how I found these pancakes and this year we made them not once or twice. Sometimes I bake them as usual pancakes, sometimes in waffle iron. Both ways we like them. Every time these pancakes comes out very fluffy and light. And they spread in a pan a lot, so make space for them. And if you like to eat pancakes without any add-ons, I suggest to add a little bit more sugar or pour over them some tasty syrup.
