Russian pancake baked in an oven

The first pancake that baked out grate. Others that I’ve tried were some how not good – too much milk, or too much berries. But this time pancake was fluffy, and tender. Only next time I’ll try to bake it in a larger form, because this time it came out very thick and that’s why taste was like curd bake but without curd 🙂 But it’s tasty, easy and quick. And you don’t have to stand near the pan.

Russian pancake baked in an oven

Time needed:
Yields: 4 servings
Calories: 232 kcal / serving

Ingredients:

  • 4 eggs
  • 250 ml flour
  • 1 tbsp. sugar
  • 160 ml milk
  • 1 tbsp. oil

Directions:

  • Separate egg whites and yolks.
  • Beat yolks with sugar till white fluffy mixture.
  • Add sifted flour and pour milk.
  • Beat egg whites till stiff peaks and carefully mix them to the mixture.
  • Grease baking form with oil.
  • Pour mixture to the form. Put it to the preheated to 180-200°C oven and bake 30 minutes.
  • Enjoy!

This simple salads are from kids recipe book (only one of a huge amount). But they really suitable for parents, just double or triple the quantities. If your little one is like mine and doesn’t like salad leaves, cut them in small chunks – it worked for my kid and he ate and didn’t noticed them.

One more cake with zucchini. Really great and moist. I didn”t have chocolate chips, but I didn”t miss them in the cake. Maybe with these chips the cake would be more delicious, but also more sinful 🙂

When I got some chanterelles, I decided to bake this year something new. And because I know how convenient to take non-sweet pies for lunch at work, I chose this recipe. Only in original recipe says to use more salt then I usually need, so I give here already corrected recipe.

Cottage cheese and boiled potato bake

Potatoes and cottage cheese – it’s always a great company. So why not to combine them in to a bake. It can be prepared within a few minutes. I found this recipe in Russian magazine about child-caring, but significantly changed by our observations: original recipe asks to slice the potatoes, but we prefer grated because it distributes better; original asks to pour more milk, we prefer the more eggs, and this bake comes out stronger. For us our experimentations came out super tasty. So, honestly, I urge you to try it too 😉

Oat muffins with dried fruits

I don’t know why but I look at baking with dried fruits suspiciously. But now I’m ashamed… I baked these muffins and ate half of them all by my self… Sour milk gave the taste of cottage cheese. Strange, but we like it 🙂
