At last I found bread that my hubby really enjoyed eating it 🙂 Yeah… For long time I baked only bread without the crust. But now I have big hopes that we will make a break with it and start baking this potato bread. By the way, the taste of this bread is slightly similar to “švilpikai” 🙂

Potato bread

Time needed:
Yields: 2 small loaves or 1 kg loaf
Calories: 2266 kcal / all

Ingredients:

  • 500 g superior grade flour
  • 1 tsp. salt
  • 15 g butter
  • 7 g active dry yeast
  • 250 g boiled potatoes, cold and mashed
  • about 250 g water or milk, warm
  • sunflower oil for greasing baking forms

Directions:

  • Pour flour and salt to a bowl, rub in butter, mix in yeast.
  • Put mashed potatoes and rub in the flour.
  • In the middle make a hole and pour water just to make soft and quite sticky dough.
  • On the floured surface knead the dough till it becomes smooth and tensile.
  • Form a ball and put it in the oiled big bowl. Cover with the oiled cling film and let rise in the warm place for an hour or till the dough will double.
  • Take out the dough on the lightly floured surface and punch a few times. Knead until the dough will be smooth and tensile..
  • Grease with the oil baking forms.
  • Divide the dough in halves, form loaves.
  • Put them in baking forms, cover with oiled cling film and let stand for 30 minutes or till the dough will rise.
  • Bake in 230°C preheated oven 10 minutes, then low down the heat to 200°C and bake for 20-25 minutes more or till the bread will brown.
  • Knock the loaves bottom. If you hear hollow sound – it’s ready.
  • Enjoy!

Notes: I prepared dough in bread machine. Then took the dough, kneaded a little bit, formed a loaf and put it to bread machine form just without mixers. Left to rise for an half-an-hour, then baked about 40-50 minutes.

Kids’ cookies

Last weekend we baked kid’s cookies. And it was really fun 🙂 I’m happy that I found these butter cookie dough. You don’t have to chill it – just mix all ingredients and you can play. Of course it has one nuance – you can’t roll it and cut with cookie forms. You make cookies by making small balls and sticks. And if you just fantasize – you can make flowers, butterflies, turtles, worms or anything you can imagine.

One more cake with zucchini. Really great and moist. I didn”t have chocolate chips, but I didn”t miss them in the cake. Maybe with these chips the cake would be more delicious, but also more sinful 🙂

This year at last we planted rhubarb in our garden ? No one missed it, just me. This year it was young, so I used it all in this pie. Everything was in its place – mild sourness, a little bit of sweetness. Hmmm we liked it very much 🙂

Strawberry and rhubarb cake

It’s very bad when you don’t write the recipe in the blog after you eat the cake 🙂 Then you have to look for the recipe for a few days. I baked this cake when we were going to the village and strawberries were still in the season. It had to be all strawberry, but I had no time so I use rhubarbs as they were near me. Rhubarb and strawberry combination isn’t new – it fits perfectly. And the texture of the cake is more like sponge than a teacake. I liked it very much.

It was really impulsive baking. I saw them in a magazine for parents in a section “Baking together”. 🙂 Together? So I asked if my kids want to bake something and they happily agreed. So I just measured all ingredients in purpose that my kids were not bored, and they started to work. The result came out perfect – smell was fantastic, and the taste was remarkable – berries gave some refreshing sourness and banana gave moisture. Even next day they were very good and left over disappeared too quickly. So I’m thinking to repeat them very soon again.
