Banana bread pudding

On the weekends we like to watch TV show “I can cook”. In other words we record it and watch when we like 🙂 One day I decided that it’s enough just to watch this showing, we need to take some action and prepare something. So we chose this banana-bread pudding. The next weekend I bought all needed products and measured everything. Then I invited kids to the kitchen to do everything what was needed to prepare pudding. And we really had a very good time 🙂 There were some troubles for kids, but I just reacted calmly and the mood of everyone was saved 🙂 Even dad said that this dessert is very good. We agreed that if we had some ice cream it would be even better, but even by itself it was very good 🙂

Banana bread pudding

Time needed:
Yields: 2 servings
Calories: 281 kcal / serving

Ingredients:

  • 25 g butter (5g for greasing and 20 g for spreading)
  • 2 slices white bread
  • 1 egg
  • 125 ml milk
  • 20 g Demerara sugar
  • pinch cinnamon
  • 1 small ripe banana
  • 1 heaped tbsp. raisins

Directions:

  • Grease the ovenproof dish with some butter. Then butter one side of each slice of bread before cutting both slices into four triangles.
  • Break an egg into the bowl and whisk it using a fork. Add the milk, sugar, cinnamon and whisk it again.
  • Peel the banana and cut it into slices.
  • Put half of the bread (four pieces) into the ovenproof dish, add the bananas and raisins. Then add the remaining bread on top, hiding the banana and fruit. Pour over the egg mixture, sprinkle the extra sugar on top and press a little bit.
  • Place in a pre-heated oven at 180ºC for 20–25 minutes, or until completely cooked through.
  • When the banana-bread pudding has cooled down a bit, you can eat it!

Šokoladinis bananų kokteilis

Chocolate banana shake

One more healthy recipe that I found in books about healthy living. It’s without diary products – that was one good point for me. Another thing – it’s with flaxseed. I’m trying to use them more in our daily family diet. So I almost ran to the kitchen and mixed it. I really recommend to let soak flaxseed meal in water for a few minutes, or your shake will be with hard small parts. But if you will be patient – shake will be very thick and creamy.

Sumuštiniai su pomidorais ir alyvuogėmis

Sandwiches with tomatoes and olives

One more our breakfast recipe. Taste reminds pizza’s, when I added basil leaves. These sandwiches you will prepare very quickly but the taste will give you a good start for the whole day.

Avižinių dribsnių košė su bananais ir riešutais

Oatmeal with banana and nuts

This morning was cloudy so it was a good time to cook this oatmeal. My kids don”t like simple oatmeal (or I just think that I still didn”t learn to cook it tasty), so I decided to make a little bit sweet but still healty version. Banana gives mild sweetness and nuts adds some crunchy texture. In the original recipe walnuts are used, but we don”t like them so I changed them to hazelnuts. At the end my little one asked next time not to add nuts at all. So decide by yourself to use or not to use nuts in your oatmeal.

Keksiukai su uogomis

Muffins with berries

It was really impulsive baking. I saw them in a magazine for parents in a section “Baking together”. 🙂 Together? So I asked if my kids want to bake something and they happily agreed. So I just measured all ingredients in purpose that my kids were not bored, and they started to work. The result came out perfect – smell was fantastic, and the taste was remarkable – berries gave some refreshing sourness and banana gave moisture. Even next day they were very good and left over disappeared too quickly. So I’m thinking to repeat them very soon again.

Sluoksniuotas varškės ir duonos desertas

Layered curd and bread dessert

One more delicious thing from ordinary products. It’s not very sweet but that’s what we need after holidays 🙂 Also it’s very good for using up stale bread. To tell the truth neither I or my husband expected that it will be so delicious. Kids liked it too. When we tasted this dessert at the same day, the bread crumbs were very crunchy, the next day – they became soft, but both days it was real pleasure to eat it.
