My kids just love corn. The first time I baked these fritter, they disappeared in a minute so there was nothing to photograph. Today I made some shots and only then invited kids to the table. And that was a good move, because fritters again disappeared in a minute. So if you or your kid like corn, I really recommend you to make them.

Corn fritters

Time needed:
Yields: 2 servings
Calories: 266 kcal / 1 serving

Ingredients:

  • 30 g flour
  • 1 tsp. baking powder
  • pinch salt
  • 1 egg
  • 1 tbsp. maple syrup (I skip it)
  • 2 tbsps. milk
  • 200 g canned corn, drained
  • 1-2 tbsps. green onion, chopped
  • 1-2 tbsps. sunflower oil

Directions:

  • Sift flour, baking powder and salt into a bowl.
  • Separate egg yolk from the white and add yolk to the flour mixture. Also add milk and syrup and mix.
  • In another bowl whisk egg white till forms stiff peaks. Carefully mix it in the batter.
  • Then add corn and chopped green onion in to the batter and carefully mix it.
  • Heat the oil in a pan. Drop a tablespoon of the batter and cook for 1-2 minutes until the undersides are golden. Flip over and cook the other side.
  • Serve hot with tomato and basil salads or enjoy them on it’s own like we always do 🙂 .

Pasta with corn

This dish is a winner for my kids! It’s very very quick and super simple. Even kids can prepare it. But I save it only for the time when I’m very tired or don’t want to stay in a kitchen for a long time. This dish is a little bit sweet because of the corn, maybe that’s why kids like it. But I have to warn you – make it only if you really like corn. My kids like pasta and corn so much that they even don’t notice that there is onion too 🙂

My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face 🙂 He even wasn’t disturbed that in this stew was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

This salads were prepared by my kids 🙂 And it’s simple but really goods. Tomatoes and cucumber gives freshness, and potatoes – satiety. My kids ate without onions, because they were the chefs 🙂 But for adults I recommend to add onion springs.

Smoked chicken breast and broccoli salads

When my mother on the weekend told me about the salads that she tasted at work, I was sceptical. And when she decided to prepare it for us, I was afraid (our taste is very different). But I’m glad that she did it, because we liked it a lot. It’s better to say that grown ups liked it, because my kids didn’t like onion and broccoli. Mayonnaise doesn’t make these salads healthy but for a quick dinner they were very good.
