Chrismas is coming! I think everyone already know that. That’s why today I wanted to write you about quick Christmas fruit cake. If you are like me and can’t plan Christmas from October with the real Christmas fruit cake (that needs to rest for 6 weeks) this cake is for you (and for me 🙂 )!

This one was a little bit too sweet for me, but with unsweetened coffee it was great. You can substitute dried fruits with you favourites. For example I substituted some prunes with dried apricots and dates, also some of raisins substituted with dried cranberries. It’s really your choice and use all your dried fruit reserves.

Quick Christmas fruit cake

Time needed:
Yields: 20 servings
Calories: 322 kcal / 1 serving

Ingredients:

  • For dried fruit mix:
  • 350 g prunes, chopped in smaller chunks
  • 200 g light raisins
  • 200 g dark raisins
  • 100 ml dark rum (I used brandy)
  • 200 g butter
  • 200 g brown sugar (about 40g substituted with molasses sugar)
  • 200 g honey
  • 2 oranges, skin and juice
  • 1 tsp. Christmas spice mix (I use cinnamon)
  • 2 tbsps. cocoa
  • For the batter:
  • 3 eggs
  • 150 g flour
  • 75 g ground almonds
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder

Directions:

  • All ingredients for dried fruit mix add to the pot and put on a medium heat to boil. Then lower the heat and let simmer for 10 minutes, mixing carefully. After that take the pot off the heat and let cool for 30 minutes.
  • Meanwhile preheat the oven to 150°C. Line baking forms with baking paper (this step is mandatory!).
  • To the warm fuit mixture add all batter ingredients and mix. If the dough starts to rise won’t worry, that’s the way it should be.
  • Devide batter into baking forms and put in an oven. Bake for 1-1,5 hours.
  • Let cool completely in a baking form and only then take it out. You can taste this cake right away or you can fold it in foil and put in a safe place (for me it was a fridge 🙂 ).
  • Enjoy alone or with your family and friends!

And one time, when I found out that we don’t have nor apple butter, nor raisins, nor nuts, I improvised and cookies we make with plum jam and poppy seeds. They turned out grate too 🙂 So I decided that these cookies are perfect when I have some jam leftovers. By the way, I used unsweetened apple jam, so if you use sweet one, then I suggest to add 50 ml less sugar.
