For real – this is my favourite granola bars. I like especially to substitute 1 tablespoon of brown sugar with molasses sugar. My all family also likes them for snack and everytime these bars are gone, they miss them.

Favourite granola bars

Time needed:
Yields: 12 servings
Calories: 211 kcal / 1 serving

Ingredients:
1 cup = 237 ml

  • 1 1/2 cup old fashioned oat (not instant)
  • 1 cup shredded coconut
  • 1/2 cup ground flaxseeds
  • 1/4 cup oil
  • 1/2 cup brown sugar
  • 1/4 cup agave or golden syrup, or honey
  • 1/2 tsp. salt
  • 2 tsps. cinnamon

Directions:

  • Preheat oven to 160˚C. Line baking form size 30x20cm with baking paper.
  • In a bowl mix all dry ingredients. In another bowl mix oil and syrup.
  • Mix well dry ingredients with wet. Pour mixture in a baking form and press.
  • Bake about 40 minutes, while edges start to brown.
  • Take out from the oven baking form and with knife cut rectangular into 12 small bars. At this moment everything will look very crusty, but believe me – it will harden when it cools down.
  • Let cool completely. Then devide into granola bars and put in a airtight contaner. You can keep these bars at room temperature for up to 1 week, but everytime we finish them quicker.

I started to make ice cream at home and that’s why I have a lot of egg whites which just needed to be used. So I remembered coconut cookies that all internet is full – quick, simple and easy. Oatmeal with banana and nuts

This morning was cloudy so it was a good time to cook this oatmeal. My kids don”t like simple oatmeal (or I just think that I still didn”t learn to cook it tasty), so I decided to make a little bit sweet but still healty version. Banana gives mild sweetness and nuts adds some crunchy texture. In the original recipe walnuts are used, but we don”t like them so I changed them to hazelnuts. At the end my little one asked next time not to add nuts at all. So decide by yourself to use or not to use nuts in your oatmeal.

Oat cookies with chocolate and puffed rice

After a long term there comes the cookies which my daughter liked very very much. Other cookies for her a too dry, she likes only the ones with dried friuts or nuts, or seeds. My son is a “white flour boy”, he can eat all cookies and these cookies were not different 🙂 . Puffed rice gives these crunchy cookies some softness. Chocolate like always gives for the cookies some charminess and while cookies are warm it is still melted and that’s the way my daughter likes 🙂
