One day when me and my colleague drinking afternoon coffee/tea talked about sweets. And she mentioned that she likes biscotti. At that time I just read about them but didn’t try to bake by myself. So I said that next time when we meet (we meet only once in a week) I will bring my first biscotti.
I have not one biscotti recipe, but for the first time I decided to bake the simplest kind – basic. I was afraid that simple ones look like rusk, so I decorated them with dark and white chocolate. At the office, we laugh that I brought them rusks but anyway biscotti disappeared quickly. And for afternoon tea/coffee there were only a few biscotti left.
Basic Biscotti
Time needed:
Yields: 40 units
Calories: 86 kcal / unit
Ingredients:
1 cup = 237 ml
- 3 1/4 cups flour
- 1 tsp. baking powder
- 1/2 cup oil
- 1 cup sugar
- 3 large eggs
- 1 tsp. vanilla sugar
Directions:
- Preheat oven to 190°C and line baking tray with baking paper.
- In a large bowl, whisk together the flour and baking powder. In a smaller bowl, combine the oil, sugar, eggs and vanilla sugar. Pour the liquid mixture into the flour and mix well, forming a stiff dough. Divide the dough in half, then form the halves into logs as long as the baking sheet and flatten slightly. Bake until golden brown and firm, about 25-30 minutes.
- Let the logs cool slightly, about a half hour. Cut them into 1cm slices and arrange them on the baking sheets. Bake again for 10 minutes, flipping the slices halfway through, until they’re golden brown around the edges.
- Let cool completely, then you can decorate them, or just store in an airtight container up to 2 weeks.
- Enjoy with a cup of tea!

Buns with bacon
We don’t eat smoked bacon with onions and bread often, just sometimes 🙂 But after visiting family in farm we got a big cut of smoked bacon. So I baked buns with bacon. I just love them, but my hubby don’t. Anyway, I baked and froze a lot of buns, so now I have snack or breakfast for a long time:)
Mini pie with pumpkin and prunes
These mini pies are very good way to use pumpkin or pumpkin puree. I and my hubby like them very much, but the kids do not. My mother asked to bake them because she wanted to take them to her work and that is the best proof to me that they taste great 🙂
Poppy seed zucchini muffins
If you still have zucchini, you should bake these muffins. They are moist as all baking with zucchini, but poppy seed gives some new flavour.
Peanut Butter Oatmeal Cookies
Sweet cookies with the mild taste of peanuts. And a little bit healthy because with oats 🙂 In original recipe used sugar for me was too much, so I used only white sugar and still for me cookies were too sweet. But my children ate have of cookies at once and hubby said that sweetness of cookies it just right.
Chocolate cake with apples
This recipe waited for a year because last year somehow I was late – apples were gone, and I didn’t want to buy them. So this year this is my first (and the only) apple cake. And it was a really good cake! I baked only half of the recipe, but I got only one slice – my kids ate almost half of it at once. I could treat my parents only with the small slices… The cake is very moist and in reality it looks better than in the book. And I won’t judge my photos 🙂
