Chicken with Baked Rhubarb

I do as always – I add recipe here only when rhubarb season is over. Even if I prepared this in the beginning of the season. But this dish is suitable for those who like sweet and sour food and for those who like meat with fruits. In the baked chicken we tasted rhubarb only a little bit, and the whole chicken taste was great. Also, I blended baked rhubarbs and served as the sauce – it was really delicious for me and my daughter.

Chicken with Baked Rhubarb

Time needed:
Yields: 6 servings
Calories: 375 kcal / serving

Ingredients:
1 cup = 237 ml

  • 1 chicken, cut into 8 pieces (I used 8 drumsticks)
  • 1 tsp. salt
  • 1/2 tsp. peppers
  • 300 g rhubarbs
  • 1/4 cup sugar

Directions:

  • Season chicken with salt and peppers and leave for the night.
  • Next day preheat the oven to 200°C.
  • Put chicken in the baking dish and roast for 30 minutes.
  • Meanwhile cut rhubarbs into pieces and mix them with sugar in the bowl.
  • Take the chicken out of the oven, place the rhubarb under the chicken, put it back in the oven, and roast for 15 minutes more.
  • Put baked chicken to the serving dish. Blend baked rhubarbs with the liquid and serve as the sauce.
  • Enjoy!

Baked chicken livers with onion and tomato sauce

From the childhood we all know that livers are very healthy to eat, but knowing doesn’t mean that you do it. One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.

I made this dessert last year several times. But I was late to add recipe here, so it waited quietly for today.
  
I found the soft sourness of rhubarb very very delicious with cream cheese cream. Others also liked it a lot. This year rhubarbs in my garden has grown and this weekend I am going to repeat again this dessert.

This chicken has a mild lemon taste. It is a little bit spicy and hot, but it’s not so hot because my kids skill eat it 🙂 The seasoning mixture in here is just perfect for us.

At first glance it seems that it is simple pilaf with chicken. But lemon and hot chilli sauce gives spicy taste to the dish. I prepared it already two times: first – without mushrooms, because my hubby was at home, the second – with mushrooms, because I was all alone 🙂 Both times it was delicious. Don’t know about other kids, by mine don’t like spicy dishes, so I didn’t even asked to taste 🙂

Chicken and rice salads with curry

I decided to prepare something new for our already boring quick menu. This dish is very quick, if you do like me – boil chicken a day before. My hubby commended. I asked him maybe the dish is so good because almost all the week we ate what we had on hand? But he assured that no and ate almost everything, leaving just a few bites for my next day lunch… You can enjoy these salads and cold, and warm.
