Swirled pumpkin cream cheese cake

It looks like simple ordinary pumpkin cake, but special taste gives cream cheese. It takes cake to another level 🙂

Swirled pumpkin cream cheese cake

Time needed:
Yields: 12 servings
Calories: 318 kcal / serving

Ingredients:
1 cup = 237 ml

  • 6 tbsps. butter, melted and slightly cooled
  • 1 3/4 cups sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsps. ground cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground nutmeg
  • 225 g cream cheese, room temperature
  • 1/3 cup water

Directions:

  • In a bowl beat butter and 1 1/2 cups sugar until smooth.
  • Beat in 2 eggs, pumpkin and water until well blended.
  • In another bowl, mix flour, cinnamon, baking soda, baking powder and nutmeg.
  • Stir it into butter mixture until well blended. Spread batter evenly in 26 cm diameter baking pan, lined with baking paper.
  • In a bowl beat cream cheese, remaining egg and remaining 1/4 cup sugar until smooth.
  • Drop cream cheese mixture in evenly spaced 1-tablespoon portions over batter.
  • Pull a knife tip through filling to swirl slightly into batter.
  • Bake in a 180°C oven until center of pumpkin batter (not cream cheese mixture) springs back when touched, about 30 minutes.
  • Let cool completely in pan then cut into bars.
  • Enjoy!

Sourdough rye bread

I bake this bread more then a year. But as always, the best recipes hardly reach the blog 🙂 Because I bake it very often and know all ingredients in my head. This bread is perfect. Really 🙂 After founding this bread I don’t buy any bread at store. Or maybe just in big gatherings when I don’t have time to bake more of this bread. 🙂

Chicken and zucchini pie

I can say that this is almost the same as Zucchini pie with tuna just tuna changed to chicken. Also I can say that I found out it only after a few times I baked this pie. Their taste are very different. They both are favourites in our family. Just now I bake with chicken more, because my kids don”t eat tuna, but pie with the chicken eats one of my kids.

We’re getting used to make pizza every weekend. Maybe because I prepare pizza dough in bread machine and freeze for later use. So when friday comes, I take one pizza dough ball from the freezer and put it in the fridge. Next day I just have to stretch it out and put all the leftovers from the fridge. Apple butter cookies with rasins

These cookies are universal 🙂 I baked them several times. And one time, when I found out that we don’t have nor apple butter, nor raisins, nor nuts, I improvised and cookies we make with plum jam and poppy seeds. They turned out grate too 🙂 So I decided that these cookies are perfect when I have some jam leftovers. By the way, I used unsweetened apple jam, so if you use sweet one, then I suggest to add 50 ml less sugar.
