Norvegian oat crackers

Crunchy crackers with just a little bit sweetness. My kids liked them. Next time I will try to make them without sugar but with a little bit more salt. I think it will be perfect with soma dips.

Norvegian oat crackers

Time needed:
Yields: 8 servings
Calories: 219 kcal / serving

Ingredients:

  • 200 g oat flakes
  • some tablespoons flour, just to let you knead dough with hands
  • 100 g butter
  • 25 g sugar
  • 1 tsp. baking powder
  • pinch salt
  • 200 ml milk

Directions:

  • Melt butter and sugar in warm milk. Pour mixture over oat flakes.
  • Blend with blender or kitchen aid and leave for an hour in a fridge.
  • Pour a few spoons of flour mixed with baking powder into the dough, just to make the dough rollable.
  • Roll the dough on floured surface as thin as you can.
  • Cut desired shapes. Prick with fork.
  • Place on baking sheet and bake in preheated till 200°C oven about 10-12 minutes.
  • Let cool and then keep in a hermetic box.
  • Enjoy!

This drink now is number one for my kids! When I ask do they want strawberry milk, every time they start to jump shouting “YES! YES! YES!”, and then drinking adds “Tastiness!” 🙂 So this is how small efforts give big joy for kids. And this is really simple just strawberry syrup with milk. But very effective! Really 🙂

This pizza dough is for those who always don’t have time to prepare pizza dough with yeast. It helped me several times, when I suddenly understood that I want pizza for Friday night and there was no pizza dough with yeast frozen in a freezer. My family liked it also and I’m very happy about that 🙂

Oatmeal with banana and nuts

This morning was cloudy so it was a good time to cook this oatmeal. My kids don”t like simple oatmeal (or I just think that I still didn”t learn to cook it tasty), so I decided to make a little bit sweet but still healty version. Banana gives mild sweetness and nuts adds some crunchy texture. In the original recipe walnuts are used, but we don”t like them so I changed them to hazelnuts. At the end my little one asked next time not to add nuts at all. So decide by yourself to use or not to use nuts in your oatmeal.

Usually I make granola in summer, when it’s hot outside and no one wants to eat porridge. But when last week I tried new recipe for granola bars and I had only crumbs, my kids ate it just like usual granola for breakfast. And then they asked to make more granola. So I make my favourite at this moment granola. Kids’ favourite granola will have to wait a little bit. They enjoy this granola too, just for them I had to add chocolate with more sugar.
