My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face 🙂 He even wasn’t disturbed that in this stew was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

Chilli stew with rice

Time needed:
Yields: 3 servings
Calories: 335 kcal / serving

Ingredients:

  • 1/2 green chilli peppers, jalapeño (I used 2 small marinated chilli peppers)
  • 1 onion
  • 1 clove garlic
  • 1/2 tbps. oil
  • 200 g mince meat
  • Taco seasoning or other spices to taste
  • 150 ml rice
  • 300 ml water
  • 2 tomatoes
  • 50 ml corns, frozen or canned

Directions:

  • Wash, de-seed and chop chilli.
  • Peel and chop onion and garlic clove.
  • Sauté chilli, onion and garlic in stainless steel pot with oil.
  • Put in mince meat and fry till it crumbles.
  • Season with spices, put rice and pour water.
  • Cover with a lid and boil about 15-20 minutes.
  • Wash and cut in cubes tomatoes.
  • Mix tomatoes and corn into the stew.
  • Serve with crunchy salads and tablespoon of natural yoghurt or sour cream.
  • Enjoy!

These salads we prepared a few times and I can say that we like it with boiled raw buckwheat, but you can use what you have, or what you like more. Here I present you our version.

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉

Tender, soft and very very delicious. For me and my kids they were just perfect, and only my hubby said that they could be more firm. But I think it’s just a matter of taste 🙂 . I prepared them already two times and both times some of the meatballs split, but it had only difference for look, not for taste.

Meat balls just melts in your mouth. Very very tasty! Just if you gonna use soy sauce, be careful with salt.

Loved from the first bite 🙂 Especially liked it my hubby – he’s the spicy food lover. For the children I didn’t even let them to taste 🙂 Not because of jealousy, just they still love mild tastes.
