Potatoes and cottage cheese – it’s always a great company. So why not to combine them in to a bake. It can be prepared within a few minutes. I found this recipe in Russian magazine about child-caring, but significantly changed by our observations: original recipe asks to slice the potatoes, but we prefer grated because it distributes better; original asks to pour more milk, we prefer the more eggs, and this bake comes out stronger. For us our experimentations came out super tasty. So, honestly, I urge you to try it too 😉

Cottage cheese and boiled potato bake

Time needed:
Yields: 6 servings
Calories: 238 kcal / serving

Ingredients:
1 cup = 237 ml

  • 500 g cottage cheese
  • 4 (~500 g) potatoes, boiled with peel
  • 3 eggs
  • 1/4 cup milk
  • salt

Directions:

  • Preheat oven to 180°C temperature.
  • Blend cottage cheese with eggs and milk.
  • Peel potatoes and grate. Add to cottage cheese mixture.
  • Season with salt.
  • Pour batter to a baking dish lined with baking paper.
  • Bake about 40-50 minutes, or while top will start to brown.
  • Serve with sour cream sauce.
  • Enjoy!

Omelette with cheese

I know, I know this is not some super stunning recipes, but this omelette is baked in our house almost every week, or when no bread we have at home, or when sandwiches starts to get boring. My kids don’t like simple omelette or baked eggs, but this is with cheese. And it buys my kids 🙂 Usually I prepare it without recipe, but I don’t like recipes without measurements so I give you exact recipe.

Tasty and easy 🙂 Put ingredients to the forms and while baking in an oven, you can go wake up your family. I prepared them already two times, but both times I over-baked it a little bit and the egg yolks were strong. But neglecting that we liked it, especially my hubby liked the eggs with a feta. And my parents said that these eggs are very solid.

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉

Very easy, but tasty. Almost as always in my blog 🙂 We all liked it. Also it’s cheap 🙂 . If you add some herbs, like dill or parsley, or add some meat and serve it with sour-cream – butter, tomato or mushroom sauce every time you will have the different dish.
