So, maybe I should try to come back from my holidays. It”s very hard but when I feel coming autumn in the morning and see yellow leaves in the garden I understand that I should move on. I was at home very rarely, and when I was at home I had no time to be in the kitchen, and when I had time to be in the kitchen I didn”t like tried recipes ? But today I say that everyone who wants light dinner, or solid breakfast should make this omelette with zucchini.

Omelette with zucchini

Time needed:
Yields: 2 servings

Ingredients:

  • 1 onion
  • 250 ml grated zucchini
  • 50 g cheese, grated
  • 2 tbsps. flour
  • 4 eggs
  • oil for frying
  • salt
  • pepper

Directions:

  • Saute onions.
  • Strain off zucchini juice.
  • Mix all ingredients and fry on low heat.
  • When the bottom will be lightly brown, carefully flip omelette and fry from other side till it will be brown.
  • Server with tomato sauce.
  • Enjoy!

Simple but satisfying salads. I liked them a lot. My hubby said that he needs more moisture, but everything can be fixed by adding sour cream or mayonnaise to your taste.

Before baking this case, I couldn’t decide – it’s a cake or a pie. But when I baked it no questions were left – it’s really a cake and the good one. Crispy top, tender egg while layer and sour cherries makes very good combination. But if you are afraid of sour cherries, you can use preserved cherries. The next time egg white layer I will make smaller or will use bigger cake form (now I used 24cm). I know, the photos are horrible, but I had to do some photos in a rush, because I try to bake less sweets and the next time this cake will be baked after long time.
