Potato salads with sour cream

I know that potatoes doesn’t sound very summery, but it’s quick and only that matters to me now. Just have to mention that I asked my hubby to boil potatoes and eggs while I was at work. 🙂

Potato salads with sour cream

Time needed:
Yields: 3 servings
Calories: 429 kcal / serving

Ingredients:

  • 2-3 big potatoes, boiled with skin
  • 30 g bacon
  • 3 eggs, boiled
  • 1 celery stalk
  • 1 big onion
  • Dressing:
  • 65 ml sour cream
  • 65 ml mayonnaise
  • 1/3 tsp. salt
  • dills

Directions:

  • Peel potatoes and cut in big chunks.
  • Cut bacon and fry in the pan then put it on the paper towel and let drain.
  • Chop celery stalk, boiled eggs and onion. Put them on potatoes.
  • Mix everything.
  • Mix sour cream, mayo, dills and salt. Pour dressing over salads and mix well.
  • Before serving chill in the refregerator for a few hours (but also it was tasty without chilling 🙂 )
  • Enjoy!

There are days when no egg are left in a refrigerator, and no one wants to go shopping. But this recipe comes to the rescue – these latkes are without egg. The taste doesn’t change from our ordinary potato latkes with eggs. So I add this recipe here that I didn’t forgot about this opportunity.

Frequently for breakfast we have simply baked eggs because it’s warm, quick and tasty. Even by daughter seeing us eating baked eggs tried and liked them. So now whole family eats baked eggs in the morning 🙂

Cold beetroot soup with sour cream

The summer is over, but we still can enjoy cold beetroot soup. I prepared it a few weeks ago, while we still had our own cucumbers and beetroots. I’ve never prepared this soup with sour cream, but it’s really good. So from now on I think I won’t by expensive sour milk that is made specially for this soup, but will buy cheaper and add some sour cream. Because it’s delicious too!

Boiled potato pancakes with cabbage filling

Bored of eating potatoes and cabbages? Don’t know what to do with them? This is the solution I found yesterday on the internet. It’s a little bit time consuming, but it’s cheap. A day before a boiled potatoes and an egg, braised cabbage with onion. So the next day I had only to form pancakes and bake. My hubby was nicely surprised with the taste, and I – with the smell (I remember it from my childhood).

Baked chicken livers with onion and tomato sauce

From the childhood we all know that livers are very healthy to eat, but knowing doesn’t mean that you do it. One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.
