Carrot muffins where you can’t feel carrots because it smells banana 🙂 If you don’t like the taste of carrots in bakings – these muffins are just for you.

Carrot muffins with honey

Time needed:
Yields: 12 muffins
Calories: 272 kcal / muffin

Ingredients:
1 cup = 237 ml

  • 200 g honey
  • 130 g butter
  • 2 small or 1 big ripe banana
  • 2 eggs
  • 200 g carrots, grated
  • 2 cups flour
  • 2 tsps. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup chopped nuts

Directions:

  • Preheat oven to 170°C.
  • Coat muffin forms with butter or line with muffins paper forms.
  • In a pan melt butter and honey.
  • Let cool a little bit and beat in eggs.
  • Mash bananas with a fork. Put bananas and carrots to the honey mixture.
  • Sieve flour, baking powder, cinnamon and salt.
  • Mix flour mixture with the honey-carrot mixture. Divide the batter between muffin tins.
  • Sprinkle with chopped nuts. Bake about 20-25 minutes, or until toothpick comes out clean.
  • Enjoy!

I can say that this is almost the same as Zucchini pie with tuna just tuna changed to chicken. Also I can say that I found out it only after a few times I baked this pie. Their taste are very different. They both are favourites in our family. Just now I bake with chicken more, because my kids don”t eat tuna, but pie with the chicken eats one of my kids.

This pie I caked in the beginning of this summer, but still in supermarket I saw rhubarbs, so maybe you still have some at home too. This pie is not very sweet. Next time I think I’ll double sugar in the filling or use less rhubarbs. But anyway, when this pie was cold kids and adults enjoyed it a lot!

Somehow I baked pancakes long time ago. So came the time when I started to miss them. And I guess my all family miss them too, because these polenta pancakes disappeared very quickly. If you don’t have polenta or lazy to grind corn groats, you can use corn flour. You just have to use more milk.
