Spanish omelet

Author: Aušra

Date:

This is our new best breakfast. We baked it I think even four times. And understood one thing – it’s really good with tomato and sour cream sauce. Maybe it would be great with green salads too, but this combination we will try only in the spring.

Spanish omelet

Time needed:
Yields: 4 servings
Calories: 316 kcal / serving

Ingredients:

  • 2 tbsps. oil
  • 2 big potatoes, cut in cubes
  • 2 big onions, cut in cube
  • 6 eggs
  • salt and black peppers
  • 1 tbsp. green onion, chopped

Directions:

  • In a pan heat oil and put potatoes and onions. Bake mixing for 10 minutes.
  • In a bowl beat eggs. Season with salt and peppers.
  • Pour egg mixture over potatoes and slightly mix. Cover with a lid and bake for about 10 minutes, while the eggs will be stiff. Then put pan in the oven and grill (turn upper heating element) for 1-3 minutes.
  • Put omelet in a big plate, cut and sprinkle with chopped green onions. I really recommend to try with sour cream and tomato sauce.

Cottage cheese and potatoes dumplings

At first I just wanted to make photo and upload it to Mano receptai.lt. But when my family tasted them, I understood that they are really good and they deserve to be posted here. I have tried to boil cottage cheese and potato dumplings without the recipe, bet they never tasted as good as these. I think the secret is good cottage cheese and potato proportions. So I really recommend to try this a little bit simplified version of dumplings.

Agurkų ir kiaušinių salotos

Cucumber and eggs salads

This simple salads are from kids recipe book (only one of a huge amount). But they really suitable for parents, just double or triple the quantities. If your little one is like mine and doesn’t like salad leaves, cut them in small chunks – it worked for my kid and he ate and didn’t noticed them.

Burokėlių sriuba su malta mėsa

Beetroot soup with minced meat

Easy but substantial soup. Because of vinegar you can feel mild sourness, so you better pour vinegar not by milliliters but by your taste. And I can say one more thing – I’ve tasted delicious soup like this long time ago.

Voveraitės su bulvėmis

Chanterelles with oven roasted potatoes

To tell the truth, this dish last year ate even my hubby! And agreed that it not only looks great, but taste the same way too. To bake potatoes in the oven takes time, so sometimes I change them with boiled potatoes. However, if you are not in hurry, you should really try to bake them in the oven. It is more tasty that way.

Cottage cheese and boiled potato bake

Potatoes and cottage cheese – it’s always a great company. So why not to combine them in to a bake. It can be prepared within a few minutes. I found this recipe in Russian magazine about child-caring, but significantly changed by our observations: original recipe asks to slice the potatoes, but we prefer grated because it distributes better; original asks to pour more milk, we prefer the more eggs, and this bake comes out stronger. For us our experimentations came out super tasty. So, honestly, I urge you to try it too 😉
