Very delicious and satisfying salads. Especially we liked that bell pepper is baked not fresh. I prepared these salads not once and tried with iceberg salad, and with salads form our garden (salads, rucola, sorrel). Every time it was perfect! And depending on vegetables amount you can prepare this salads for 6 or for 3 people. It’s up to you 🙂

Baked chicken salads

Time needed:
Yields: 4 servings
Calories: 180 kcal / serving

Ingredients:

  • 1 head lettuce
  • 3-4 tomatoes
  • 2-3 short stem cucumbers
  • 1/2 red onion (I used handful of chopped green onion)
  • 1 red bell pepper
  • 1 chicken breast
  • seasoning (salt, peppers, curry, etc.)
  • 3-4 tbsps. mayonnaise
  • 1-2 tbsps. water
  • 1 clove garlic
  • oil for frying

Directions:

  • Cut chicken breast into stripes, season with seasonings and some oil. Mix and let marinate.
  • Cut salads, put them on a plate. On top put cut tomatoes, cucumbers and onion.
  • Cut bell pepper into stripes and fry in a little bit of oil. When bell pepper will be soft, take it out and put it on salads. Then in the same oil fry chicken from all sides, while inside it will be white. Put chicken on salads too.
  • In a bowl mix mayonnaise, water, oil from the pan and crushed garlic. If needed season with salt and peppers. Pour sauce over the salads and serve while chicken is warm.
  • Enjoy!

From the childhood we all know that livers are very healthy to eat, but knowing doesn’t mean that you do it. One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.

This chicken has a mild lemon taste. It is a little bit spicy and hot, but it’s not so hot because my kids skill eat it 🙂 The seasoning mixture in here is just perfect for us.

I prepared it already two times: first – without mushrooms, because my hubby was at home, the second – with mushrooms, because I was all alone 🙂 Both times it was delicious. Don’t know about other kids, by mine don’t like spicy dishes, so I didn’t even asked to taste 🙂

Almond chicken fingers

These chicken fingers are very good. A lot of spices are used in the recipe, but the combination is perfect. Only cayenne pepper you should add according to your taste. When I prepare this chicken to my children, I add only half of it, but in the original it is used twice as much. Fingers are prepared very quickly, and the most exciting thing that it doesn’t need time to marinate, and later you don’t have to stand near the pan. For your health – it’s only for the good. We ate this chicken already many times, sometimes just as fast food – with some sauce and pickles or oven ​​fried potatoes. This time we had it for dinner with some vegetable stew, ordinary enough, but still everything was good and we liked it.
