Chicken is quite often prepared for lunch or dinner at our house, so it’s not surprise that I try to find new recipes with it. Till now I haven’t tried chicken with lemon. But this recipe is with mild lemon taste and is not very sour, so all my family enjoy it.

Lemon chicken

Time needed:
Yields: 6 servings
Calories: 488 kcal / 1 serving

Ingredients:
1 cup = 237 ml

  • 1,4-1,8 kg chicken parts (suggestion to use thighs)
  • 2 tbsps. lemon peel, only yellow part
  • 1/3 cup lemon juice
  • 2 cloves garlic , crushed
  • 2 tbsps. fresh or 2 tsps. dried thymes
  • 1 tbsp. fresh or 1 tsp. dried rosemary
  • 1 tsp. salt
  • 1 tsp. black peppers
  • 2-3 tbsps. butter, melted

Directions:

  • In a bowl mix lemon juice, lemon peel, garlic, thyme, rosemary, salt, and pepper. Cut into each chicken piece one or two times – this will help the marinade. Place the chicken pieces in marinade and turn over that every side was coated with marinate. Cover bowl and put in the refrigerator. Let marinate for at least for 2 hours.
  • Preheat oven to 210°С. Remove chicken from marinade and place in a single layer in baking dish, skin side up. Reserve the marinade. Use a pastry brush to brush a little melted butter on to each piece of chicken.
  • Bake 50-55 minutes, until the skins are crispy brown, and from cut chicken runs clear juice. Half-way through the baking, baste the chicken pieces generously with reserved marinade.
  • Baked chicken take out of the oven, cover with foil and let rest for 10 minutes. Serve chicken with the baking juices on the side or a little poured over the top of the chicken. Enjoy!

Chicken with Baked Rhubarb

I do as always – I add recipe here only when rhubarb season is over. Even if I prepared this in the beginning of the season. But this dish is suitable for those who like sweet and sour food and for those who like meat with fruits. In the baked chicken we tasted rhubarb only a little bit, and the whole chicken taste was great. Also, I blended baked rhubarbs and served as the sauce – it was really delicious for me and my daughter.

Very delicious and satisfying salads. Especially we liked that bell pepper is baked not fresh. I prepared these salads not once and tried with iceberg salad, and with salads form our garden (salads, rucola, sorrel). Every time it was perfect! And depending on vegetables amount you can prepare this salads for 6 or for 3 people. It’s up to you 🙂

Cinnamon always associates with Christmas. So when autumn comes, we all tend to bake apple pies which almost every time are seasoned with cinnamon. But this spice is used not only for sweets. With it you can really prepare very tasty and also healthy dishes. One of them – chicken with cinnamon and paprika. And even if you are not used to cinnamon in non sweet meals, I can say that in here it gives only a very mild aroma and a good pinch of bitterness and cosiness. And paprika has a lot of vitamin C, so it’s really good if you don’t want to get cold.

Chicken and rice stew with chanterelles

At first glance it seems that it is simple pilaf with chicken. But lemon and hot chilli sauce gives spicy taste to the dish. I prepared it already two times: first – without mushrooms, because my hubby was at home, the second – with mushrooms, because I was all alone 🙂 Both times it was delicious. Don’t know about other kids, by mine don’t like spicy dishes, so I didn’t even asked to taste 🙂

Chicken and buckwheat stew

Sad, but true… I have to go to work again… After more than two years of vacations. But let’s look at everything from another point of view – I have to think what to take to work for lunch and what to prepare for very quick dinner. Also from now on I can bake more sweets because to drink coffee gathers many girls 🙂 But let’s talk about this dish. I boiled buckwheats yesterday, so today I made everything in 15 minutes. You can call this dish stew or cereal with chicken 🙂 We’re not used to eat buckwheats with meat, but this new taste was good 🙂 Just my hubby wanted grated cheese on top and maybe some chili 🙂
