Frequently for breakfast we have simply baked eggs because it’s warm, quick and tasty. Even by daughter seeing us eating baked eggs tried and liked them. So now whole family eats baked eggs in the morning 🙂

But despite how they are satisfying sometimes we are getting tired of them and start looking for new breakfast ideas. So this frittata is good for us too – it’s healthy and with vegetables. My kids don’t like it a lot, but maybe if I’ll eat it often enough they will like it as baked eggs too 🙂

Frittata with green beans and tomatoes

Time needed:
Yields: 4 servings
Calories: 239 kcal / 1 serving

Ingredients:

  • 5 eggs
  • 300 g boiled green beans
  • 2 tomatoes
  • 100 g cheese
  • 1 tbsp. butter
  • salt
  • peppers

Directions:

  • Beat eggs with salt and peppers. Add cut in 2cm logs green beans, cut in cubes tomatoes and grated cheese.
  • Heat the pan and melt butter. Pour into it pan frittata mixture and bake till the bottom will be nicely brown. Them put frittata with a pan in the oven under the grill (if your pan can be used in the oven) or flip with the help of plate and bake while the other side will be nicely brown too.
  • Enjoy!

This salads were prepared by my kids 🙂 And it’s simple but really goods. Tomatoes and cucumber gives freshness, and potatoes – satiety. My kids ate without onions, because they were the chefs 🙂 But for adults I recommend to add onion springs.

Crab sticks salad with tomato

In my family I guess only I eat these crab sticks. So while my kids were still sleeping and my hubby was already working, I tried some recipes with them. This recipe is very quick and easy. Especially tasty with homegrown tomatoes 😉 I enjoyed them on toasted pumpkin bread (that’s why my bread is so yellow). Hope you will like them too!

Grainy curd and tomato salads

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉

Brinza cheese bake

When I saw brinza in a store, I bought it without thinking. But it rested in a fridge for a while. Then I searched my recipe archive and found one recipe with this cheese. So I prepared this dish the same day. My hubby liked it, even a lot 🙂 Children ate a lot too, so I think they liked it too. The taste reminded us stewed curd lasybones, which we like the same as marmots 🙂 The next day I sliced left overs and fried with a little bit butter in a pan. Kids liked it too. So I think this recipe has full right to be in my blog 🙂

Sometimes happens that you buy something and forget where you were planning to use it. The same happened with cherry tomatoes. So I used this easy recipe. I was surprised when my hubby liked it, because he doesn’t like basil and oregano.
