Spring is near so we should start cleaning our freezers. We love green beans and every year I prepare a lot of them for the winter. But almost always the best dish for me and my daughter is fried green beans with butter and bread crumbs. Until now! Maybe this delicious salads are very tasty just for me and my hubby, because dressing has a really strong taste. But kids also eat these salads, just amount is not very big 🙂

Balsamic green bean salads

Time needed:
Yields: 4 servings
Calories: 149 kcal / 1 serving

Ingredients:

  • 450 g green beans
  • 1/2 red onion
  • 250 g cherry tomatoes
  • 50 g feta, crumbled
  • Dressing:
  • 2 tbsps. olive oil
  • 1,5 tbsps. lemon juice
  • 1,5 tbsps. balsamic vinegar
  • 1-2 cloves garlic, crushed
  • salt
  • black peppers

Directions:

  • In a small bowl mix all dressing ingredients.
  • Trim ends of green beans and rinse. Boil for about 3-4 minutes until crisp-tender. In a colander, rinse well with cold water to stop cooking, then pat dry. Cut green beans into 3-4 cm pieces
  • Dice red onion. Cut in half cherry tomatoes.
  • In a bowl mix green beans, onion and dressing. Put bowl in a refrigerator for 1 hour or more to marinate.
  • When ready to serve add tomatoes and feta. Mix carefully and serve. Enjoy!

Quick and easy dish. That’s what I need for supper. I liked that there is no cheese. But I don’t know about my hubby. He is the cheese lover, but eating this dish he didn’t mentioned cheese. So I don’t know he was satisfied with the meal or just tired repeating that he needs cheese 🙂 Any way – the dish is good and classic.

Sad, but true… I have to go to work again… After more than two years of vacations. But let’s look at everything from another point of view – I have to think what to take to work for lunch and what to prepare for very quick dinner. Also from now on I can bake more sweets because to drink coffee gathers many girls 🙂 But let’s talk about this dish. I boiled buckwheats yesterday, so today I made everything in 15 minutes. You can call this dish stew or cereal with chicken 🙂 We’re not used to eat buckwheats with meat, but this new taste was good 🙂 Just my hubby wanted grated cheese on top and maybe some chili 🙂

My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face 🙂 He even wasn’t disturbed that in this stew was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.
