I don’t know why but I look at baking with dried fruits suspiciously. But now I’m ashamed… I baked these muffins and ate half of them all by my self… Sour milk gave the taste of cottage cheese. Strange, but we like it 🙂

Oat muffins with dried fruits

Time needed:
Yields: 16 muffins
Calories: 165 kcal / muffin

Ingredients:

  • 1 1/2 glass (180 g) flour
  • 1 tsp. baking powder
  • 1/2 glass (60 g) oat flakes
  • 1/2 glass (75 g) light brown sugar
  • 1/2 glass (125 ml) oil
  • 2 eggs
  • 1/2 glass (90 g) dried fruits, chopped
  • 1 glass (250 ml) kefir or sour milk

Directions:

  • Mix flour, baking powders, sugar and oat flakes.
  • In another bowl mix oil, eggs and kefir.
  • Mix dry and wet ingredients. Add chopped dried fruits.
  • Pour dough into muffin forms, that are slightly coated with butter.
  • Bake about 25-30 minutes in 190°C preheated oven.
  • Enjoy!

Usually I make granola in summer, when it’s hot outside and no one wants to eat porridge. But when last week I tried new recipe for granola bars and I had only crumbs, my kids ate it just like usual granola for breakfast. And then they asked to make more granola. So I make my favourite at this moment granola. Kids’ favourite granola will have to wait a little bit. They enjoy this granola too, just for them I had to add chocolate with more sugar.

Weekend 🙂 and at last I had time carefully to look what’s in a fridge 🙂 And my eyes saw sour milk that will spoil very quickly if I won’t do anything. So I remembered not so long ago published Bea sour milk muffins. There was no time to think – just do. And now I’m sitting happy and satisfied with a cup of tea:)

At first I was very sceptical about this recipe, because I thought that butterscotch and dried fruits won’t fit together. I was wrong and I am very happy about that 🙂 Dried fruits are perfect here, the dessert is not too sweet because of them.

I bake these buns everytime I have some cottage cheese left and want something sweet but at the same time simple. And the next day I just love to warm them a few seconds in the microwave – then they smell like newly baked. Really good!
