It is classic Venice rice dish. Usually it”s served with more liquid than in risotto. And the most important – it is really easy and quick. We made it a few times, and always family is delighted.

Risi e bisi

Time needed:
Yields: 6 servings

Ingredients:

  • 60 g butter
  • 1 onion, finely diced
  • 60-90 g ham, cut in cubes
  • 2 cloves garlic, finely diced
  • 300 g risotto rice
  • 300 g peas, frozen
  • salt
  • black pepper
  • 1 l chicken or vegetable stock, hot
  • 60 g parmesan cheese, grated
  • 2 tbsps. choped parsley, for decoration

Directions:

  • In a big pot melt butter.
  • When it will start to bubble, put onions, ham, garlic and fry on low heat for about 3-5 minutes till onions become soft but do not change its color. Do not forget to mix from time to time.
  • Pour rice and mix to coat with butter.
  • Pour frozen peas and seasonings.
  • Pour half stock and constantly mixing stew on low heat till there will be no liquid.
  • Then pour a little bit more stock and heat again till it soak to rice. Repeat it till rice become soft and the mixture – thick. It will take about 25 minutes.
  • Serve hot, sprinkled with parmesan and parsleys.
  • Enjoy!

We like to eat these muffins for afternoon snack when we don’t want anything sweet. I make mini muffins so they are perfect for little children hands. They disappear very quickly.

Frequently for breakfast we have simply baked eggs because it’s warm, quick and tasty. Even by daughter seeing us eating baked eggs tried and liked them. So now whole family eats baked eggs in the morning 🙂

One more salads that are very good in autumn or in winter or anytime while don’t have any fresh greens. You can mix everything in a bowl, but I think it’s beautiful and more quick to serve them layered in plates. The next day I prepared them without tuna, and they got a lot of compliments from my kids.

Very delicious cake. I never have a chance to photo it because every time it disappears very quickly. It”s so juicy, not dry at all. And my husband can eat almost half of the pie at once 🙂

Last weekend, while my children were sleeping in the afternoon, I wanted to bake something sweet. But I was angry at my self, because I didn’t know what can I bake. So I started to browse in my computer looking for something suitable. And I saw these cakes. I decided to make them. I know, that they’re not sweet, but I had everything they needed in my fridge. I just didn’t make baskets out of rice, just did two layer cakes. And they tasted very good. At first I was afraid that my hubby will miss meat in them, but I was wrong 🙂
