I must confess – I have never ate the real kibinai ? But this weekend we had some guests who likes kibinai a lot, and they said that these kibinai are very good (kibinai also agreed with guests “cause they disappeared from the plate very fast ? )

Maybe not the real ones but really tasty kibinai

Time needed:
Yields: 30-35 kibinai

Ingredients:

  • Dough:
  • 1 kg all-purpose flour
  • 450 g butter or margarine
  • 4 eggs
  • 200 g sourcream (30% fat)
  • salt
  • Filling:
  • 1 kg pork collar butt
  • 3 onions
  • 50 g butter or margarine
  • salt
  • ground black pepper
  • splash cold boiled water

Directions:

  • Cut butter into cubes and put it in the flour. Grind thoroughly, till crumbs forms.
  • Then put three eggs and one egg white, sourcream, salt and mix well.
  • Put prepared dough in the fridge and start preparing filling.
  • Cut meat into small bits.
  • Put cut onions, butter, seasonings, splash of water and mix well.
  • Take the dough from the fridge, divide it to 30-35 balls (for me one ball weighted about 50 g).
  • Roll out balls into sheets, put some filling in the center of these sheets and press the edges to form kibinai (you can see how to do it in recipe source).
  • Put kibinai on the baking paper and coat with the left egg yolk mixed with a splash of water.
  • Bake in 200°C oven about 30-35 minutes.
  • Enjoy!

The first pancake that baked out grate. Others that I’ve tries were some how not good – too much milk, or too much berries. But this time pancake was fluffy, and tender. Only next time I’ll try to bake it in a larger form, because this time it came out very thick and that’s why taste was like curd bake but without curd 🙂 But it’s tasty, easy and quick. And you don’t have to stand near the pan.

Old times white bread

This bread was baked in a lot of blogs and forums, but I could photograph it just now, although I baked it already five times. My hands and eyes were not successfull 🙂 One time I overrised it, next time had to use rye flour, another next time some othe my mistakes. But despite that this bread is really good, like in old times. Just I would prefere to use milk instead water – it changes bread texture, it becomes more mild.

Peppered pork pitas with garlic spread

This is my family favourite. Don’t know why – it looks so simple, but even my kids can’t stop eating till the plates are empty. You can buy pitas and just warm them, your dinner will be very quick, but I like homemade pitas. I’ve tried a few recipes, but this one I liked most, because all pitas were perfectly baked from the first time.

This recipe waited for a year because last year somehow I was late – apples were gone, and I didn’t want to buy them. So this year this is my first (and the only) apple cake. And it was a really good cake! I baked only half of the recipe, but I got only one slice – my kids ate almost half of it at once. I could treat my parents only with the small slices… The cake is very moist and in reality it looks better than in the book. And I won’t judge my photos 🙂
