Fantastic cheesecake, everyone liked it and my hubby just loved it. But also very solid, so you can have only one piece of this cake and this will be enough.

Pumpkin cheesecake

Time needed:
Yields: 12 servings

Ingredients:
1 cup = 237 ml

  • Crust:
  • 1 ½ cups roughly ground graham crackers
  • 5 tbsps. melted butter
  • 1/3 cup sugar
  • ¾ tsp. salt
  • Filling:
  • 600 g cream cheese, softened
  • 1 ¼ cups sugar
  • ¼ tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground ginger
  • 2 tbsps. all-purpose flour
  • 3 large eggs
  • 2 large egg yolks
  • ½ tsp. vanilla extract
  • 2 cups pumpkin puree

Directions:

  • Mix all crust ingredients and press into bottom of a 23 cm spring form pan.
  • Chill while preparing pumpkin cheesecake batter.
  • Preheat oven at 175°C.
  • In a mixing bowl beat together cream cheese, sugar, flour and all spices till smooth.
  • Combine eggs, yolks and vanilla then add it to cheese mixture one at a time on low speed, scraping the side of the bowl on each addition.
  • Fold in pumpkin puree.
  • Pour in prepared spring form pan and bake for 40 to 50 minutes, the center should be slightly “jiggly”.
  • Cool completely and refrigerate for 4 hours before unmolding.
  • Enjoy!

Brinza cheese bake

When I saw brinza in a store, I bought it without thinking. But it rested in a fridge for a while. Then I searched my recipe archive and found one recipe with this cheese. So I prepared this dish the same day. My hubby liked it, even a lot 🙂 Children ate a lot too, so I think they liked it too. The taste reminded us stewed curd lasybones, which we like the same as marmots 🙂 The next day I sliced left overs and fried with a little bit butter in a pan. Kids liked it too. So I think this recipe has full right to be in my blog 🙂

Challah basket

Today we celebrate Easter in my son’s kindergarten. I was asked to bring few eggs, but I just had to put them somewhere. So I baked this basket 🙂 But while I was baking it, 2 eggs of 5 were eaten by my children, so I have to put candies to look basket pretty 🙂

Pizza waffles

When today children heard that will be these waffles for lunch, impatiently waited until they baked and of course waffles disappeared quickly. Daughter even after a dance session ate all leftovers. She literally licked the plate clean (I had to look carefully into the plate to understand that it was not washed out :)). But don’t think that some wild people live down here in our house, I have to mention that she licked the sauce with waffle, not with the tongue 🙂

If you still have zucchini, you should bake these muffins. They are moist as all baking with zucchini, but poppy seed gives some new flavour.

Muffins with rhubarbs and walnuts

At last this hear I grew some rhubarbs. And baked this muffins in June, but they appear on my blog only now. Sorry 🙂 These muffins are soft and I recommendto bake them in paper forms. I sprinkled some with cinnamon mixture, some didn’t. My hubby decided that with cinnamon is better. And I, cinnamon lover, can’t disagree with him 🙂
